The different teas

When it comes to teas, we have to admit that the choice is particularly wide. All over the world, and particularly in Asia, the land of tea-growing par excellence, I've been able to find top-of-the-range varieties to delight the palate.

Black tea

This is an oxidized tea, a process that gives it a longer shelf life. Note that what is known in the West as "black tea" is called "red tea" by the Chinese. Several stages are necessary to produce a quality black tea like Darjeeling or Yunnan: - withering; - rolling; - oxidation; - roasting; - sorting. One of the best-known and most widely consumed black teas is Earl Grey, a black tea with bergamot.

Green tea

This time, we discover a tea that is not oxidized: only three steps are needed to process the tea leaves and produce a high-quality green tea: roasting, rolling and drying. This is the tea most appreciated by Asians for its quality and the many virtues it is said to have. One of the best known is Matcha green tea.

Red tea

Red tea, also known as rooibos, is not a real tea. In fact, it comes not from the tea plant, but from a shrub native to South Africa. It is highly appreciated for its absence of theine. In fact, theine can cause anemia in people who do not bind iron well. For people with this problem who appreciate the pleasures of a good tea, rooibos is the ideal choice.

White tea

Here, the tea leaf is in its most natural state. Only two steps are required to produce a top-quality white tea: withering and drying. White tea is often actually made from buds. This is a fine, subtle tea.

Oolong tea

This is a semi-oxidized tea, halfway between black and green tea. Low in theine, it is also suitable for people with iron absorption problems, but who want a real tea. What's more, since theine has the same exciting properties as caffeine, this tea is perfect for those who want to drink it in the evening. It's the fermentation time that determines the flavor and quality of oolong tea.

Smoked tea

This is a very special grand cru tea that appeals to tea aficionados. Smoked tea originated in China, but is most popular in the West. It, too, is a semi-oxidized tea somewhere between green and black. It is smoked after harvesting over a wood fire to give it a totally unique flavor. Lapsang Souchong is the most famous smoked tea.

Flavored and scented tea

I offer you natural tea to discover its true flavors. But I've also chosen to offer you flavored tea to discover new taste horizons. A cup of green tea with mint is a pleasure for many tea lovers. But while it's one of the most talked-about beverages, it's far from the only one, and tea enthusiasts are looking for more complex aromas. Red berries, orange blossom, cinnamon, grapefruit, bergamot, vanilla, passion fruit: the best teas can be combined to create a comforting hot drink.

The power of infusion

While I've chosen to offer you the finest teas, I haven't forgotten the infusion that appeals to most of you. Infusions are ideal for people who want to drink a delicious hot beverage throughout the day, but have a problem with theine. It's also a solution for the evening, when you want to avoid any stimulants. A symbol of relaxation, infusion is a must. Based on aromatic plants or citrus fruits, herbal teas come in a variety of flavors to seduce every palate. Verbena, the great classic, mint, lime blossom, vervain mint, lemon, lemon-lime, rosemary, sage, thyme: the choice is extremely vast for a natural aroma. Enjoy the many benefits of a vervain or mint infusion, and be sure to respect the infusion time, as with tea, to appreciate all the flavours of these hot drinks. Leave to infuse for a few minutes - I'll give you the ideal time in each product data sheet. Don't wait for the water to reach 100°C before removing it from the boiler and brewing your tea or infusion.

Forget the tea bags and use a tea ball, tea tongs or a teapot. And if you still want to drink tea from a bag because it's more convenient for you, especially at the office, you'll find that there are empty tea bags that you can fill yourself. A solution that combines economy, pleasure and the quality of every infusion.
