  • What is my Scandinavian smoked Viking salt?

    Viking smoked salt is a great alternative to traditional salt. It will give a special taste to your hot or cold dishes. The Scandinavians have been experts for decades in smoking and salting fish and meat. This precious know-how still manages to surprise our gourmet taste buds today.

    Ingredients of Viking smoked salt

    It is often the simplest recipes that are the most appreciated. I prepared the smoked Viking salt in the most sober way possible. It is composed of an aromatic salt that I have specially selected to make this mixture.

    The Nordic flavours in this salt come from the smoke aromas that I dose very precisely in order to bring that characteristic Nordic taste note. I have tested this recipe several times, with different measures to find the right balance that I propose to you today.

    The pleasure of taste also passes through the pleasure of the eyes. So, to find the colour of the smoking technique for meat and fish, I use the natural colouring E150a based on caramel. A touch of this ingredient is enough to obtain the light orange colouring of the salt from the Nordic countries.

    The origins of salt in the Nordic countries

    We often hear about the Vikings as a people of ruthless and ruthless warriors. The legends about their past are certainly true: they were proud and organized fighters. But what interests me in their history are the less popular stories about their travels and the gastronomy of these northern tribes. For if they are most often known for their brutality, they are less known for their conviviality around the table.

    The Vikings were experts in smoking and salting. When they did not immediately cook the fruits of hunting and fishing as stew or grilled, they prepared their food to preserve it for a long time.

    The history of Lothar and Berghild

    Often, genius ideas come from a mistake. This is exactly the case with Viking smoked salt. The recipe for this Scandinavian salt was a mistake. When a Viking tribe returned from fishing, it was customary to cut up fish and cetaceans and store them in a salt cellar for better conservation. However, the salting room was already filled with all the meat from pig, goat and sheep farming.

    Lothar, at the age of 14, had been entrusted with the task of making room for the food for the winter in a safe place. So the young man moved the salted pieces of meat into the smokehouse without worrying about the fact that they had already been salted?

    Then one day while preparing a meal of leg of lamb, Berghild, one of the women of the tribe, smelled the meat had an unusual smell. She prepared the meat anyway, worried about disappointing her tribe. The questioning in the eyes of the people at the table gave way to the rapture of their stomachs. Mixing the iodized taste of salt with the smoky flavours was a great idea! We can therefore thank Lothar for his clumsiness and Berghild for her risk-taking, to whom we owe the seasoning of our plates from 10th century Scandinavia.

    Benefits of salt

    The harmful effects of salt are regularly pointed out when it is consumed in excess. However, used in moderation in dishes, it contributes to the mineral intake in the body thanks to the presence of sodium and magnesium. Iodine also plays a role in the balance and proper functioning of the thyroid gland.

    How to use Viking smoked salt in cooking?

    On the nose as well as on the palate, this alliance of iodised flavours reminiscent of sea spray and the palette of smoke plunges you directly into the heart of the Scandinavian forests! Whether for everyday meals or in the preparation of more elaborate dishes, Scandinavian salt can be used in all sauces. Use it to salt directly on your plate or incorporate it during the preparation of your dishes. Salt from the Nordic countries is ideal for different foods and recipes:

    • Fish (especially excellent with grilled salmon)
    • Potatoes

    It is difficult to give you a single main course recipe with Viking smoked salt because it is a perfect seasoning for all your red and white meats, poultry and fish. It goes well with roast pork, leg of lamb or roast chicken with lots of flavour. In a traditional Scandinavian spirit, offer your guests a delicious Bakerens Lam (Baker's lamb)!

    How to store smoked salt

    The smoked Viking salt can simply be stored in a dry place, away from humidity, in a tin can or in a closed glass jar. Keep it close to your work surface to use it in your everyday recipes!
