What is Tellicherry pepper?

Tellicherry pepper comes from India, more precisely from the town of Thalassary (the French name for Tellicherry). This city in the state of Kerala on the Malabar coast in southwestern India offers you a great pepper. Did you know that? On this same coast is produced the Malabar MG1 pepper. This is the standard pepper on which spice merchants base themselves to determine a size. The Malabar coast is a strategic place for spice merchants. In the early 18th century, the British built a defense in the heart of Tellicherry to better control the pepper trade, a highly prized spice that was of real economic interest to the colonizers. Some peppers are said to be "original", such as Tellicherry pepper. Tellicherry is the assurance of obtaining a noble pepper of high quality obtained from the best berries. The pepper from India is a piper nigrum (black pepper). Picked when fully ripe, the red berries are then dried and given a black color, although here and there you will see a few slightly reddish grains. If this pepper has a real story, it tells it to you by offering you a unique gustatory pleasure. Are you looking for a high quality pepper? Tellicherry pepper is for you.

What does Tellicherry pepper taste like?

Pepper lovers fall under the spell of this spice with its intense flavors and complex aromas. It asserts its woody, fruity notes that draw strongly on citrus and may remind you of some of the peppers I have selected for you such as Sansho pepper or mandarin pepper. Of course, Tellicherry pepper is definitely different and is a must-have spice. It has seduced palates all over the world. Like any pepper, it does not hide its spicy side while remaining reasonable and able to seduce all gourmets. Thus, it brings a beautiful flavor to your plate without taking over.

The harvest of Tellicherry pepper in the plantations

The pepper from India is a piper nigrum (black pepper). Picked when fully ripe, the red berries are then dried and given a black color, although here and there you will see a few slightly reddish grains. The harvest of this pepper is late, it offers grains of beautiful size. The berries are harvested twice a year.

How to use Tellichery pepper in cooking

Taste Tellicherry pepper and you risk not being able to live without it. The beautiful bunches of this wild pepper offer you berries with warm flavors that will delight your taste buds. When it comes to eating Thalassary pepper, the possibilities are endless. Perhaps they are even infinite. This pepper enhances the taste of a mushroom or truffle risotto. It enhances a pike-perch with its citrus notes and magnifies the beurre blanc that accompanies it. With a barbecued steak, prepare a small marinade with Tellicherry pepper. In a frying pan or with a roast beef, make a superb pepper sauce, your dish will take on a whole new dimension. For your pepper sauce, you can try associations with a Sichuan pepper, a white pepper or a long pepper. You can imagine everything with this spice. Naturally, it offers a particular flavor and aroma to white meats. The extraordinary thing about pepper is its ability to combine with different flavors. If it comes to raise your salted dishes, it magnifies your sweet dishes. With red fruits, with chocolate or in a dessert associated with Tonka beans, it offers you a real gustatory journey and reveals another facet of sweet dishes.

The conservation of the pepper of Thalassary

Tellicherry pepper is best kept away from light at room temperature. This is also the case for spices in general, whether it is turmeric, Kampot pepper, green pepper, Espelette pepper or pink berries. I deliver it in a resealable bag that you can store in a closet. You can also slip it directly into a pepper pot.

je me souvenais du poivre tellichery comme étant peu piquant mais très parfumé, or je n'ai pas retrouvé ce parfum dans le poivre reçu.
