South India - Kerala (Periyar, Wayanad).
Tellicherry pepper comes from India, and more precisely from the city of Thalassary (the French name of Tellicherry). This town in the state of Kerala on the Malabar coast in southwest India offers you a great pepper. Did you know that? On this same coast is produced the MG1 Malabar pepper. This is the standard pepper that spice merchants use to determine a grade. The Malabar coast is a strategic location for spice merchants. At the beginning of the 18th century, the English built a defence in the heart of Tellicherry to better control the trade in pepper, a highly prized spice that was of real economic interest to the colonizers. Some peppers are said to be "original", such as Tellicherry pepper. Tellicherry is the assurance of obtaining a noble pepper of high quality obtained from the best berries. The pepper from India is a piper nigrum (black pepper). Picked when fully ripe, the red berries are then dried and take on this black tint, even if you will see here and there some slightly reddish grains. If this pepper has a true story, it tells it to you by offering you a unique taste pleasure. You were looking for high quality pepper? Tellicherry pepper is for you.
Pepper lovers fall under the spell of this spice with intense flavours and complex aromas. It asserts its woody, fruity notes which strongly pull on citrus and which will perhaps remind you of some of the peppers I have selected for you, such as Sansho pepper or mandarin pepper. Of course, Tellicherry pepper is decidedly different and asserts itself as an essential spice. It has seduced palates all over the world. Like all peppers, it does not hide its spicy side while remaining reasonable and capable of seducing all gourmets. Thus, it brings a very beautiful perfume to your plate without taking over.
The pepper from India is a piper nigrum (black pepper). Picked at full maturity, the red berries are then dried and take on this black tint, even if you will see here and there some slightly reddish peppercorns. The harvest of this pepper being late, it offers grains of beautiful size. The berries are harvested twice a year.
To taste Tellicherry pepper is to risk not being able to do without it. The magnificent bunches of this wild pepper offer you berries with warm flavours that will delight your taste buds. When we talk about consuming Thalassary pepper, we can imagine that the possibilities are numerous. Perhaps they are even infinite. This pepper enhances the taste of a mushroom or truffle risotto. It sublimates a pike-perch with its citrus notes and magnifies the white butter that accompanies it. With a barbecue steak, prepare a small Tellicherry pepper marinade. In a frying pan or with a roast beef, make a superb pepper sauce, your dish will take on a whole new dimension. For your pepper sauce, you can try combinations with Szechuan pepper, white pepper or long pepper. You can imagine everything with this spice. Naturally, it gives a particular flavour and aroma to white meats. What is extraordinary with pepper is its ability to combine with different flavours. If it adds flavour to your savoury dishes, it will enhance your sweet dishes. With red fruits, with chocolate or in a dessert associated with Tonka beans, it offers you a real gustatory journey and unveils another facet of sweet dishes.
Tellicherry pepper, like all peppers, contains antioxidants, which help with digestion. Some people consider it an aphrodisiac, like vanilla, ginger or chocolate.
Tellicherry pepper is best stored in a dark place at room temperature. This is moreover the case of spices in general, whether it is turmeric, Kampot pepper, green pepper, Espelette pepper or pink berries. I deliver it to you in a resealable bag that you can store in a cupboard. You can also slip it directly into a pepper shaker.
