  • What is Colombo des Îles?

    Traditionally, Colombo is a mixture composed of 4 spices: coriander, pepper, garlic and turmeric.

    I made the choice to compose my blend using at least these 4 original spices, in order to give you an authentic recipe.

    Like Massalé and Ras-el-hanout, the Colombo des Îles blend will vary in composition depending on the region and local tastes.

    Did you know that? The Colombo of the Islands is also called the "Caribbean Curry". It occupies a predominant place in Creole kitchens.


    Ingredients of Colombo des Îles

    The combination that I propose to you is composed of 10 spices.

    Some of these spices are roasted or roasted before being reduced to powder, then the whole is skillfully dosed to offer you a pleasant blend on the nose and in the mouth.

    • Turmeric: a plant of Indian origin, the main ingredient in curries and carrys. It is used in cooking, but also to colour clothes or as a food preservative.
    • Salt: A condiment composed mainly of sodium chloride which is a flavour enhancer.
    • Cumin: an essential spice in oriental cuisine. It is native to the Mediterranean region.
    • Coriander: An aromatic plant used in Asian and South American cuisine. It is also used in the components of certain perfumes or sanitary products.
    • Mustard: a condiment whose spiciness varies according to the recipe. There are many types of mustard: yellow mustard, strong mustard, old-fashioned mustard, flavoured mustard..
    • The hot pepper: fruit of a plant native to South America, it brings spice to this blend.
    • Fenugreek: a condiment plant with multiple medicinal virtues found in the composition of many curry spice blends.
    • Pepper: a unique spice whose flavours and spiciness vary according to the variety of pepper.
    • Garlic: a superaliment originating from Central Asia with an intense taste.
    • Fennel: a plant with an aniseed flavour of which there are many varieties.

    Differences between the colombo of yesteryear and the colombo of today

    The traditional Island Colombo is a blend of 4 spices: coriander, chili, garlic and turmeric. But colombo has many variations depending on the region or the people who make it up.

    Today's Colombo blends can contain up to 10 spices to obtain high-flavoured and more subtle spice blends. This is particularly the case of this Colombo des îles.

    The origins of the Colombo spice blend

    Colombo takes its name from the capital of Sri Lanka where it originates. During the migration of East Indians (the coolies) to the West Indies in the 19th century, its composition changed, particularly due to the absence of certain spices on these islands. It will very quickly occupy a predominant place in the Creole kitchens where each family will have its own recipe and even giving its name to a dish that will become a must-have West Indian dish!

    Benefits of the ingredients of this spice blend

    The spices in this blend all have their own or shared virtues. Among them are :

    • Facilitates digestion: notably thanks to the presence of turmeric, chilli pepper and fenugreek
    • Drops the fever: one of the benefits of pepper
    • Acts on circulatory problems: thanks to salt
    • Relieves constipation: thanks to the presence of fennel
    • Tones: thanks to fenugreek and its action on appetite stimulation

    How to use Colombo des Îles in cooking?

    Even if at first sight Colombo powder could be confused with curry, you just have to smell this mixture of spices for Colombo des Îles to differentiate them. Indeed, the fragrances of this blend will be much more full-bodied on the nose than a simple basic curry. It will have an inimitable character once sprinkled into your dishes and recipes.

    Flavours more developed than curry

    In the mouth, you will find more developed flavours than those that characterize a Kerala Curry.

    The resulting notes will be lightly aniseed (thanks to the fennel), garlic, spicy and woody (turmeric, cumin and pepper dominant). Then you will feel another more vegetal aromatic impulse, notably due to the presence of coriander and fenugreek.

    The combination of these ten spices and herbs will transport you to each of their countries of origin. The point of salt makes it possible to amplify my aromatic composition.

    Good to know : This Colombo des Îles spice blend is good for long cooking. It therefore has its place in stewed dishes.

    Multiple uses for creative and exotic cuisine

    If its name reminds us directly of this typical dish of Caribbean gastronomy, you will discover that it is also possible to combine this Colombo des Îles at different times of the meal, and on very different dishes!

    Prepare and enjoy marvellous pork, chicken and goat pigeon pigeons, having taken care to let the meat marinate in this blend all night long before the meal. You can try the Colombo de Porc Antillais (Caribbean Pork Colombo), in the style of Alain Ducasse.

    The colombo is also available with dishes from the sea, such as a colombo of sea bream (mahi-mahi) or swordfish.

    Our recipe ideas with Colombo des Îles

    Sauce dishes, stews, meats, fish and vegetables... sprinkle a teaspoon of my Colombo mixture over your casserole and let yourself be carried away by its enchanting aromas.

    The starter: Toasts with Creole ratatouille

    A simple and tasty entry that is original and quick to execute. Garnish with peppers, tomatoes and an onion. Fry them in oil. Add a teaspoon of our spice mixture. Serve on a slice of toast. Serve with a salad with vinaigrette.

    The dish : Creole rice

    A side dish rice that seduces for its strong taste. Sauté chopped onions in oil. Add long rice and a teaspoon of Colombo des Îles, fry the rice before moistening it with 0.5 litres of boiling water. Cook and stir. Excellent with poultry or fish.

    Dessert: Mango skewers with Colombo

    A dessert with exotic fruits that is enhanced by our Colombo des Îles. A quick and simple recipe to end the meal on a gourmet yet light note. Cut your mango into large cubes. Plant them on a skewer pick and grill them on the grill. Sprinkle with the spice mixture.

    How to keep your Colombo?

    Colombo des Îles spice blend keeps like most of our spices and herbs: dry and away from light. We recommend using an airtight container to keep its aromas intact.
