Per plate:100g of tuna Afew salad leaves4 quail eggsDuo of rare pepper of your choice (fruity, spicy, aromatic, full-bodied) 3 small tomatoesLovage from the mountains6 black olives1/4 cucumberSmoked salt of the Vikings or Caribbeansalt 4cl lemonjuice 4cl rapeseed oil
In a nice plate in this sense: place your salad leaves, cucumber slices, tomato slices, quail eggs, crumbled tuna, black olives.
In a small bowl, mix your rapeseed oil, lemon juice, flavoured salt and lovage from the mountains.
Crush your first pepper on it. I recommend a spicy or strong pepper such as that of East Timor or Madagascar.
Crush your second pepper. Have fun adding an aromatic touch, insist on citrus notes with Timut pepper or Sansho pepper.
