On the green slopes of western Uganda, not far from the border with Rwanda and the Democratic Republic of Congo, grows a rare vanilla with exceptional notes.

As in Madagascar, due to the lack of pollinating insects in sufficient numbers, this delicate orchid needs to be hand-pollinated and with precision.

With the help of a thorn, the matchmakers will tear the cap of this marvellous flower and make the male and female organs meet.

The volumes are derisory but it is clear that we are looking for a black vanilla that can compete with the most beautiful aromatic palettes of Madagascar.

Nevertheless, thennual quantities are increasing every year. Thanks to the price of vanilla, the Ugandan producers have the chance to start the adventure of vanilla which becomes a real source of export income other than the traditional crops (coffee, cotton, cocoa, corn, rice,...).

Today, it is a real privilege for me to be able to offer you such vanilla from Uganda. If you choose to discover my selection, i i assure you that it will be a real olfactory discovery

Uganda has two rainy seasons and the flowering takes place in March-June and September-October two harvests The first one in January and the main harvest in July.

The fiber of the vanilla from Uganda is similar to that of the Comoros, wide and flat. Its colour is rather matt

The vanilla of Uganda is it is the same species as the Madagascar vanilla (Vanilla Planifolia) but it has a slightly less fatty and therefore more matte appearance with more woody notes, leather, peat and sometimes even juniper. The pods are deep black or dark brown and slightly oily. Its a frank nose of dried fruit and cocoa is much appreciated by my pastry friends it is used in ganaches and other creams.

For some years now, the cooperatives in the region have been optimising their specifications and methods in order to offer a Planifolia that can be appreciated on the international market.

Its specificity resides in the fact that it is the only one of its kind in the world vanilla ideal for savoury dishes! It will sublimate duck, salmon, shrimps or foie gras.


This vanilla is a culinary journey, it is easy to find similarities with the madagascar vanilla because of its intense flavour with notes of cocoa fruity.

By trying the Uganda vanilla that I have carefully selected, you will discover a vanilla bean that is becoming a serious competitor of the Malagasy vanilla and whose price is decreasing year after year thanks to the increase in production and know-how.

It is a vanilla bean that is in the process of rising in quality. It will be necessary to wait until 2025 for the producers to perfectly master its refining



Being more full-bodied than other vanillas, it is perfectly recommended for savoury dishes. It goes wonderfully well with white or red meatIt will be just as good with the meat of duck meat as well as your fish and shellfish.

Nevertheless, the vanilla of Uganda knows perfectly how to emphasize your cocktails and desserts. Do not hesitate to combine it with strong spicesYou can also use it with other flavours such as Madagascar Wild Pepper, Nepalese Timut Pepper or Brazilian Tonka Bean.

The ideal is to let it infuse longer than the Madagascar vanilla bean so that it delivers all the subtleties of its fragrance.

Here is a small selection of recipes in which this exceptional vanilla will magnify its aromatic talents :

Cocktails / Drinks Cocktails / Drinks: a real vanilla rum or rum liqueur

Fish / Shellfish Fish / Shellfish : cod with vanilla sauce, langoustines with vanilla sauce

White and red meats White and red meats : chicken with vanilla and pineapple, veal blanquette with vanilla, duck breast lacquered with spiced honey and Uganda vanilla

Let it also surprise you by incorporating it into a red wine sauce or to sublimate blanquette and pot-au-feu!

Desserts For example, it can be used in cream desserts, crème brûlée, whipped cream, chocolate desserts, or even some fruity desserts such as roasted pineapple, compotes, etc

Chefs have already adopted it! I invite you to test the wild flavour of this vanilla by incorporating it in Alain Ducasse's " Tian of scallops and fennel ".
