Imagine yourself for a moment with your muse along a river with only a luxuriant nature for horizon. The only sound in the background... a waterfall. Nature, you and your scented black tea. Do you need to refresh yourself? How about trying this exotic fruit iced tea?
Yunnan black tea is grown in China in the region of the same name located at the gateway to Burma and Laos. It flourishes on the high plateaus of this region and benefits from a warm and humid climate that allows it to develop according to the seasons.
After the leaves have been picked from the tea plant, they are oxidized to obtain a black tea (which the Chinese call red tea). The tea leaves are placed on racks at a temperature between 20 and 24° for 18 to 32 hours. During this withering stage, they are ventilated with forced air.
Then, the rolling is an important operation because it will impact the strength of your tea. The tea leaves are then placed in an oxidation room with a humidity level between 90 and 95% and a temperature between 20 and 22° for 1 to 3 hours.
Then comes the drying phase, here the leaves are heated for 10 to 15 minutes at 90°, the humidity level is suddenly lowered to 5%.
Finally, your Yunnan black tea is sorted and ready to be enjoyed.
