On the green slopes of western Uganda, not far from the border with Rwanda and the Democratic Republic of Congo, grows a rare vanilla with exceptional notes.
As in Madagascar, due to a lack of pollinating insects in sufficient numbers, this delicate orchid needs to be manually pollinated and with precision.
With the help of a thorn, the matchmaker will tear the cap off this wonderful flower and meet the male and female organs.
The volumes are derisory but we have to admit that we are here in search of a black vanilla pcompeting with the most beautiful aromatic palettes of Madagascar.
Nevertheless, thehe annual quantities are increasing every year. Thanks to the vanilla price, Ugandan producers have the chance to start the vanilla adventure, which becomes a real source of export income other than traditional crops (coffee, cotton, cocoa, corn, rice,...).

Uganda has two rainy seasons and flowering takes place in March-June and September-October, so producers can proceed with two harvests one in January and the main harvest in July.
The fibre of Ugandan vanilla is similar to that of the Comoros, wide and flat. Her dress is rather matt
Uganda vanilla is of the same species as that of Madagascar (Vanilla Planifolia) but it has a slightly less greasy and therefore more matt appearance with more woody notes, leather, peat and sometimes even juniper. The pods are deep black or dark brown and slightly oily. Sound a clear nose of dried fruits and cocoa is very appreciated by my pastry friends who use it in their ganaches and other creams.
For several years now, the cooperatives in the region have been optimising their specifications and methods in order to offer a Planifolia which could be appreciated on the international market.
Its specificity lies in the fact that it is the vanilla ideal for salty dishes! It will sublimate duck, salmon, shrimps or even foie gras.
This vanilla is a culinary journey, it is easy to find similarities with the madagascar vanilla because of its intense flavour and cocoa notes fruity.
By trying the Uganda vanilla that I have carefully selected, you will discover a vanilla pod that is becoming a serious competitor of Malagasy vanilla and whose price is falling year after year thanks to the increase in production and know-how.
It is a vanilla bean that is rising in quality. It will be necessary to wait until 2025 for the producers to perfectly control its maturing
Being more full-bodied than other vanilla products, it is perfectly recommended for salty dishes. It will marry wonderfully with the white or red meatit will be able to sublimate the meat of duck that your fish and shellfish.
