Until 20 years ago, this origin was not known to the market. The producers had a lot of credit because no one in the region knew vanilla. The first year, a small group went to Manus Island and came back with cuttings. 3 years have passed and the first flowers have appeared. Members of each community left in order to be trained in the fertilization of vanilla flowers. When the flowers were fertilized, when the pods started to grow, yet another journey had to be made to understand the different stages of maturing a vanilla pod.
Today, in the communities of the Sepik region, many people grow vanilla. The income generated by this activity allows communities to build schools, hire teachers and repair bush roads. The community system allows a more fluid management of vanilla plantations but also a good use of this new village economy.
I am in constant contact with producers, collectors, community leaders and exporters in this region. These men inspire me and I am proud to be able to contribute to the development of their origins and to contribute to the building in my own way

Black Gourmet Vanilla 20-30% moisture, more fatty with round, full-bodied and floral notes of a Tahitensis. Final with notes of liquorice and leather. A superb complexity, an intensity to discover quickly.
Its aroma has enchanted me. I was so used to Bourbon vanilla, to the planifolia species. Love at first sight was as intense as when I discovered pompona Schiede vanilla from Guadeloupe. As in love, it is always difficult to explain "Quivering", the alchemy that makes you subjugated by an origin in the first second.
Many of you understand what I mean. Epicureans, lovers of wine or noble products have probably already felt this feeling. A vanilla, a sourcing, a very difficult region to access.
A Tahitensis vanilla of the same species as the one found in French Polynesia. A singular aromatic, so different from the others. A complex nose that starts with spicy notes in the attack, bottom notes on the flower, leather-liquorice.
Sourcing is difficult as the quality of the batches differs from one producer to another. It took a considerable amount of time to find serious partners who met my specifications. As vanilla prices were high, refining was not well done on most samples or vanilla was not picked at full maturity.
A very difficult area to access because there are no roads leading to it from Port Moresby, the capital in northern Papua New Guinea. You must either fly or boat to the Sepik region. Once there, the roads are busted, the villages of the communities are easily 2 days away from the first city.
Vanilla maturities do not occur at the same time in different areas, which further complicates collection.

Trop hâte de m'en servir .Des belles gousses bien épaisses ,grasses,une odeur..... Cela va faire merveille à infuser une nuit dans du lait qui a bouilli (recette Conticini) et ensuite créme sur ,glaces ,flan Vous donnerai mes impressions après essais
