The refined Bourbon vanilla, known as Brown Vanilla or Red Vanilla (for these reddish reflections in places) represents the largest volume exported from Madagascar. It is used by flavourists, perfumers and food processing companies for the quality of these macerates and infusions.
It must be understood that just because a vanilla pod is drier does not mean that it is not of good quality. Those who will simplify the explanation for you have not understood everything. A Bourbon vanilla pod matured at a moisture content of between 20 and 25%. Its vanillin content, the main aromatic molecule of a vanilla pod, will often be the same as on a fatter and wetter vanilla (Bourbon Gold type from Madagascar). The pure "vanilla" amplitude of base like in vanilla ice cream will be present. The fact that a vanilla pod is drier with a vanillin content similar or close to a Bourbon Gold vanilla will allow it to have a more precise nose.
The aromatic nose will offer notes with an accuracy that no Bourbon Gold vanilla can offer. To put it simply, when a Bourbon Gold vanilla (more humid) offers round, warm cocoa notes with a creamy finish (the fruity notes being different depending on the year, harvest, refinement, terroir, etc.), the refined Bourbon vanilla will have an exceptional aromatic precision on the nose (main notes, bottom notes, final notes).
Why do I love refined Bourbon Vanilla?
Visually, the refined pods are fine with a pearly sheen due to the essential oils on the surface. When you run your fingers over a pod, often a few grains settle on your fingers. These are split pods that have been separated when handling the same batch and not split. The introduction is superb.
On the nose, it is difficult to explain what it "sends" but here is what my heart (and of course my nose) can tell you:
- Straightforward notes of honey with all flowers on the attack, sweet, light notes of roasted peanuts.
- Very fruity base notes: raspberries, blueberries, wild strawberries.
- Final notes: creamy, raw cocoa and hay.
I like the precision of this vanilla and its aromatic flavour. As with other vanilla beans, origins and varieties, the longer your vanilla bean will be, the more aromatic its aroma will be "work" and "complete".
A long vanilla pod will very often have a higher vanillin content than a small vanilla pod (11 to 13cm).

Les gousses sont magnifiques, bien grosses et de belles tailles. L'odeur à l'ouverture du paquet envahie les naseaux, je ne m'en lasse pas de ces arômes sublimes. Restes à tester dans ma cuisine mais je sais que le résultat sera là.
