VANILLA FROM UGANDA - EXCEPTIONAL QUALITY AND AROMA

On the verdant slopes of western Uganda, not far from the border with Rwanda and the Democratic Republic of Congo, grows a rare vanilla with exceptional notes.

As in Madagascar, due to a lack of pollinating insects in sufficient numbers, this delicate orchid needs to be pollinated manually and with precision.

Using a thorn, the "marieuses" tear the cap off this marvellous flower and bring the male and female organs together.

Volumes are derisory, but it's clear that we're looking for a black vanilla that can rival Madagascar's finest aromatic palettes.

Nevertheless,annual quantities are increasing every year. Thanks to the price of vanilla, Ugandan growers have had the chance to begin the vanilla adventure, which is becoming a real source of export income in addition to traditional crops (coffee, cotton, cocoa, corn, rice, etc.).


Today, it's a real privilege for me to be able to offer you such vanilla from Uganda. If you choose to discover my selection, I assure you it will be a real olfactory discovery.

WHAT'S SO DIFFERENT ABOUT THIS VANILLA?

Uganda has two rainy seasons, with flowering taking place in March-June and September-October, so growers can harvest twice: once in January and the main harvest in July.

The fiber of Ugandan vanilla is similar to that of Comorian vanilla, broad and flat. Its color is rather matte.

Uganda vanilla is from the same species as Madagascar vanilla(Vanilla Planifolia), but is slightly less fatty and therefore duller, with woodier notes of leather, peat and sometimes even juniper. The pods are deep black or dark brown and slightly oily. Its frank nose of dried fruit and cocoa is much appreciated by my pastry chef friends, who use it in their ganaches and other creams.

For some years now, the region's cooperatives have been optimizing their specifications and methods in order to offer a Planifolia that can be appreciated on the international market.

Its specificity lies in the fact that it is the ideal vanilla for savory dishes! It's perfect for duck, salmon, shrimps or foie gras.

WHY DISCOVER THIS GRAND CRU FROM UGANDA?

This vanilla is a culinary voyage in itself, and has much in common with Madagascar vanilla in its intense flavor and fruity cocoa notes.

When you try the Ugandan vanilla I've carefully selected, you'll discover a vanilla pod that is becoming a serious competitor to Madagascan vanilla, and whose price is falling year on year thanks to increased production and know-how.

The quality of vanilla beans is improving. We'll have to wait until 2025 for producers to master the art of refining vanilla beans.

RECIPE IDEAS FOR USING UGANDA VANILLA BEANS :

More full-bodied than other vanillas, Uganda vanilla is ideal for savory dishes. It goes wonderfully well with white or red meats, and will enhance duck as well as fish and shellfish.

However, Uganda vanilla is also perfect for cocktails and desserts. Don't hesitate to combine it with strong spices such as Madagascar wild pepper, Nepalese Timut pepper or Brazilian Tonka bean.

Ideally, it should be left to infuse longer than the Madagascar vanilla bean, to release all the subtleties of its fragrance.

Here is a small selection of recipes in which this exceptional vanilla will magnify its aromatic talents :

Cocktails / Drinks : a real vanilla rum or rum liqueur

Fish / Shellfish: vanilla cod colombo, vanilla scampi

White and red meats: chicken with vanilla and pineapple, veal blanquette with vanilla, duck breast lacquered with spiced honey and Uganda vanilla

Let it surprise you by adding it to a red wine sauce, or to enhance blanquette and pot-au-feu!

Desserts : crème dessert, crème brûlée, chantilly, chocolate-based desserts, or even fruity desserts such as roasted pineapple, compotes..

Chefs have already adopted it! I invite you to test the wild flavor of this vanilla by incorporating it into Alain Ducasse's " Tian of scallops and fennel ".
