The vanillin level of my exhausted vanilla is 0.2% max depending on the batch. Exhausted vanilla comes in combination with your vanilla beans but does not flavour your recipes.

When you open a vanilla pod to collect the seeds, all you have left is the pod. Once this pod is split and the vanilla beans extracted, the remaining shell is poor in natural flavour. It can be dried and crushed: it is exhausted vanilla powder.
Its low vanillin content (located at a maximum of 0.2% depending on the batch) will not allow you to perfume your preparations on its own. On the other hand, it will provide these "small blackheads" which give an appetizing and very aesthetic appearance. Most industrial preparations (pastries, yoghurt, dessert cream, vanilla ice cream) are filled with it, often with an artificial flavouring.
The exhausted vanilla powder is therefore neither vanilla extract, vanilla sugar nor vanilla powder itself. There may still be small pieces of pods left, so the artisanal and traditional side remains intact!
In your kitchen, it will allow you to reinforce this aspect and will offer an even more gourmet experience than by using only the contents of a "traditional" pod. However, I would remind you that it does not absolutely replace a vanilla bean and cannot flavour your creations on its own. It is to be used in addition to a usual vanilla contribution (vanilla powder house, extract or syrup of vanilla house, complete pod to let infuse). You can marry her to a Bourbon Vanilla pod from Madagascar and thus obtain a masterpiece look!
Some dessert recipe ideas to add some of my exhausted vanilla powder.
Desserts: rice pudding, cheesecake, crème brûlée, pastry flan.
Creams: custard, custard, dessert cream, ganache, dessert or simple vanilla cream.
Sweetnesses: Easter chocolates, vanilla ice cream, homemade yoghurts flavoured with natural vanilla, compote, fruit salad.
Culinary aids: topping, icing, pancake batter, etc.
No matter how you use this exhausted vanilla, it will always be much better than any other commercial product that uses it. Yours will be free of all sweeteners, invert sugar, saturated fats and other glucose syrup!
