Why buy downgraded vanilla beans?

Downgraded vanilla is our internal term for vanilla beans that do not meet the quality standards to be sold as premium vanilla beans. These beans may have aesthetic flaws such as blemishes, completely split, cracks, non-regular sizes or uneven colors .

These characteristics can make them perfect for macerations in alcohol, as vanilla releases its flavors more easily when the bean is split and air can circulate inside. Declassified vanilla beans are also often much shorter than premium vanilla beans, at about 8 cm in length. However, the vanillin content (main vanilla notes) will be much lower than on premium beans.

In sum, although downgraded vanilla beans are not considered premium vanilla beans because of their aesthetic imperfections, they can offer very interesting results for macerations in alcohol. Their aromatic potential is very interesting and they can be used to create arranged rums, vanilla extracts or homemade vanilla syrups with an excellent quality/price ratio, actually unbeatable.

- You are aware that these vanilla beans are very small, totally split, dry with a low vanillin content but that for the creation of homemade vanilla extracts, they fulfill their mission perfectly.

Recipes with declassified vanilla beans

Homemade vanilla extract with white alcohol

Ingredients:

5 to 6 vanilla beans

25 cl of white alcohol (preferably 50% alcohol)

A glass bottle with an airtight cap


Preparation:

Cut the vanilla beans in half lengthwise.

Put the cut vanilla beans in the glass bottle.

Pour the white alcohol over the vanilla beans in the glass bottle.

Close the bottle tightly and shake gently to mix.

Store the bottle in a cool, dark place for at least 2-3 months to allow the vanilla flavors to diffuse into the alcohol, shaking the bottle once a week.

You can adjust the amounts of alcohol and vanilla to suit your personal preferences. This recipe is easily adaptable to larger or smaller amounts. You can also use other types of alcohol, such as rum or vodka.

Rum with declassified vanilla and candied ginger

Ingredients: 1 liter of white rum, 4 split vanilla beans, 100 g of candied ginger, 50 g of cane sugar.

Preparation: Put the rum, the split vanilla pods and the candied ginger in a glass jar. Add the cane sugar and shake the jar to mix well. Let the mixture sit for 1 to 2 weeks before enjoying.

Arranged rum with declassified vanilla and cinnamon

Ingredients: 1 liter of white rum, 4 split vanilla beans, 2 cinnamon sticks, 50 g of cane sugar.

Preparation: Put the rum, the split vanilla pods and the cinnamon sticks in a glass jar. Add the cane sugar and shake the jar to mix well. Let the mixture sit for 1 to 2 weeks before enjoying.

Degraded Vanilla and Orange Rum

Ingredients: 1 liter of white rum, 4 split declassified vanilla beans, 2 untreated oranges, 50 g of cane sugar.

Preparation: Wash and dry the oranges. Remove the zests with a peeler. Put the rum, the vanilla pods and the orange peels in a glass jar. Add the cane sugar and shake the jar to mix well. Let the mixture sit for 1 to 2 weeks before enjoying.

Arranged rum with declassified vanilla and coconut

Ingredients: 1 liter of white rum, 4 split vanilla beans, 200 g of grated coconut, 50 g of cane sugar.

Preparation: Put the rum, the split vanilla pods and the grated coconut in a glass jar. Add the cane sugar and shake the jar to mix well. Let the mixture sit for 1 to 2 weeks before enjoying.

Rum with declassified vanilla and lime

Ingredients: 1 liter of white rum, 4 split declassified vanilla beans, 2 untreated limes, 50 g of cane sugar.

Preparation: Wash and dry the limes. Remove the zests with a peeler. Put the rum, the declassified vanilla pods and the lime peels in a glass jar. Add the cane sugar and shake the jar to mix well. Let the mixture sit for 1 to 2 weeks before enjoying.

Arranged rum with declassified vanilla and pineapple

Ingredients: 1 liter of white rum, 4 split vanilla beans, 1 fresh pineapple, 50 g of cane sugar.

Preparation: Peel and cut the pineapple into pieces. Put the rum, split vanilla pods and pineapple pieces in a glass jar. Add the cane sugar and shake the jar to mix well. Let the mixture sit for 1 to 2 weeks before enjoying.

Rum with declassified vanilla and honey

Ingredients: 1 liter of white rum, 4 split vanilla beans, 100 g of honey, 50 g of cane sugar.

Preparation: Put the rum, declassified vanilla beans, honey and cane sugar in a glass jar. Shake the jar to mix well. Let the mixture sit for 1 to 2 weeks before enjoying.

Rum with declassified vanilla and coffee

Ingredients: 1 liter of white rum, 4 split vanilla beans, 100 g of coffee beans, 50 g of cane sugar.

Preparation: Put the rum, split vanilla pods and coffee beans in a glass jar. Add the cane sugar and shake the jar to mix well. Let the mixture sit for 1 to 2 weeks before enjoying.

Rum with declassified vanilla and lavender

Ingredients: 1 liter of white rum, 4 split declassified vanilla beans, 1 tablespoon of dried lavender flowers, 50 g of cane sugar.

Preparation: Put the rum, the split vanilla pods and the lavender flowers in a glass jar. Add the cane sugar and shake the jar to mix well. Let the mixture sit for 1 to 2 weeks before enjoying.

Arranged rum with declassified vanilla and mint

Ingredients: 1 liter of white rum, 4 split vanilla pods, 1 bunch of fresh mint, 50 g of cane sugar.

Preparation: Wash and dry the mint leaves. Put the rum, the split vanilla pods and the mint leaves in a glass jar. Add the cane sugar and shake the jar to mix well. Let the mixture sit for 1 to 2 weeks before enjoying.

Rum with declassified vanilla and strawberry

Ingredients: 1 liter of white rum, 4 split declassified vanilla beans, 250 g of fresh strawberries, 50 g of cane sugar.

Preparation: Wash and hull the strawberries. Cut them into pieces and put them in a glass jar with the rum and the vanilla pods. Add the cane sugar and shake the jar to mix well. Let the mixture sit for 1 to 2 weeks before enjoying.

Rum with declassified vanilla and chili

Ingredients: 1 liter of white rum, 4 split vanilla beans, 2 red pili-pili peppers, 50 g of cane sugar.

Preparation: Wash and cut the peppers in small pieces. Put the rum, the split vanilla pods and the chili pieces in a glass jar. Add the cane sugar and shake the jar to mix well. Let the mixture sit for 1 to 2 weeks before enjoying.

Rum with declassified vanilla and green tea

Ingredients: 1 liter of white rum, 4 split vanilla beans, 3 tablespoons of green tea, 50 g of cane sugar.

Preparation: Put the rum, the split vanilla pods and the green tea in a glass jar. Add the cane sugar and shake the jar to mix well. Let the mixture sit for 1 to 2 weeks before enjoying.

Arranged rum with declassified vanilla and cocoa

Ingredients: 1 liter of white rum, 4 split vanilla beans, 50 g of cocoa powder, 50 g of cane sugar.

Preparation: Put the rum, vanilla beans, cocoa powder and cane sugar in a glass jar. Shake the jar to mix well. Let the mixture sit for 1 to 2 weeks before enjoying.

Rum with declassified vanilla and cardamom

Ingredients: 1 liter of white rum, 4 split declassified vanilla beans, 1 tablespoon of cardamom seeds, 50 g of cane sugar.

Preparation : Crush the cardamom seeds to release their aroma. Put the rum, the vanilla pods and the cardamom seeds in a glass jar. Add the cane sugar and shake the jar to mix well. Let the mixture sit for 1 to 2 weeks before enjoying.
