Downgraded vanilla is our in-house term for vanilla beans that don't meet the quality standards to be sold as premium vanilla beans. These pods may present aesthetic defects such as stains, completely split, cracks, non-regular sizes, uneven colors or be broken. Very often, they are dry beans.
These characteristics make them ideal for macerating in alcohol. However, the vanillin content (main vanilla notes) will be much lower than on premium quality beans.
In short, although downgraded vanilla beans are not considered as premium vanilla beans due to their aesthetic imperfections, they can offer very interesting results for macerations in alcohol. Their aromatic potential is very interesting and they can therefore be used to create arranged rums, vanilla extracts or homemade vanilla syrups with an excellent quality/price ratio, in fact IMBATTABLE!By buying declassified vanilla beans:- You buy vanilla beans at a ridiculously low price, allowing you to have a quality/price ratio defying all competition.- You add value to harvests from several origins to be destocked, i.e. Papua New Guinea, Uganda or Madagascar.- You enable us toinvest in complete harvests with our partners in order to simplify their harvest and thus add value to their entire annual vanilla crop.- You should be aware that these vanilla beans are very small, totally split, broken, dry with a low vanillin content , but that for the creation of homemade vanilla extract, they fulfill their mission perfectly.
Ingredients:
100g or approx. 50 declassified vanilla beans
100 cl white spirit (preferably 50% alcohol)
A glass bottle with an airtight cap - maceration 2 months minimum.
Preparation:
Place the chopped vanilla beans in the glass bottle.
Pour the white alcohol over the vanilla beans in the glass bottle.
Close the bottle tightly and shake gently to mix.
Store the bottle in a cool, dark place for at least 2-3 months to allow the vanilla flavors to diffuse into the alcohol, shaking the bottle once a week.
You can adjust the quantities of alcohol and vanilla to suit your personal preferences. This recipe is easily adaptable to larger or smaller quantities. You can also use other types of alcohol, such as rum or vodka.
Ingredients: 1 liter white rum, 4 split declassified vanilla beans, 100 g candied ginger, 50 g cane sugar.
Preparation: Place the rum, split vanilla pods and candied ginger in a glass jar. Add the cane sugar and shake the jar to mix well. Leave to stand for 1-2 weeks before serving.
Ingredients: 1 liter white rum, 4 split declassified vanilla beans, 2 cinnamon sticks, 50 g cane sugar.
Preparation: Place the rum, split vanilla pods and cinnamon sticks in a glass jar. Add the cane sugar and shake the jar to mix well. Leave to stand for 1-2 weeks before serving.
Ingredients: 1 liter white rum, 4 split declassified vanilla beans, 2 untreated oranges, 50 g cane sugar.
Preparation: Wash and dry the oranges. Remove the zest with a peeler. Place the rum, declassified vanilla pods and orange zest in a glass jar. Add the cane sugar and shake the jar to mix well. Leave to stand for 1-2 weeks before serving.
Ingredients: 1 liter white rum, 4 split declassified vanilla beans, 200 g shredded coconut, 50 g cane sugar.
Preparation: Place the rum, deconstructed vanilla pods and shredded coconut in a glass jar. Add the cane sugar and shake the jar to mix well. Leave to stand for 1-2 weeks before serving.
Ingredients: 1 liter white rum, 4 split declassified vanilla beans, 2 untreated limes, 50 g cane sugar.
Preparation: Wash and dry the limes. Use a peeler to remove the zest. Place the rum, declassified vanilla pods and lime zest in a glass jar. Add the cane sugar and shake the jar to mix well. Leave to stand for 1-2 weeks before serving.
Ingredients: 1 liter white rum, 4 split declassified vanilla beans, 1 fresh pineapple, 50 g cane sugar.
Preparation: Peel and chop the pineapple. Place the rum, split vanilla pods and pineapple pieces in a glass jar. Add the cane sugar and shake the jar to mix well. Leave to stand for 1-2 weeks before serving.
Ingredients: 1 liter white rum, 4 split declassified vanilla beans, 100 g honey, 50 g cane sugar.
Preparation: Place the rum, declassified vanilla pods, honey and cane sugar in a glass jar. Shake the jar to mix well. Leave to stand for 1-2 weeks before serving.

Preparation: Place the rum, split vanilla pods and lavender flowers in a glass jar. Add the cane sugar and shake the jar to mix well. Leave to stand for 1-2 weeks before serving.

Preparation: Wash and dry the mint leaves. Place the rum, split vanilla pods and mint leaves in a glass jar. Add the cane sugar and shake the jar to mix well. Leave to stand for 1-2 weeks before serving.
Ingredients: 1 liter white rum, 4 split declassified vanilla beans, 250 g fresh strawberries, 50 g cane sugar.
Preparation: Wash and hull the strawberries. Cut into pieces and place in a glass jar with the rum and split vanilla pods. Add the cane sugar and shake the jar to mix well. Leave to stand for 1-2 weeks before serving.
Ingredients: 1 liter white rum, 4 split declassified vanilla beans, 2 red pili-pili peppers, 50 g cane sugar.
Preparation: Wash and finely chop the chillies. Place the rum, split vanilla pods and chili pieces in a glass jar. Add the cane sugar and shake the jar to mix well. Leave to stand for 1-2 weeks before serving.
Ingredients: 1 liter white rum, 4 split declassified vanilla beans, 3 tablespoons green tea, 50 g cane sugar.
Preparation: Place the rum, split vanilla pods and green tea in a glass jar. Add the cane sugar and shake the jar to mix well. Leave to stand for 1-2 weeks before serving.
Ingredients: 1 liter white rum, 4 split declassified vanilla beans, 50 g cocoa powder, 50 g cane sugar.
Preparation: Place the rum, declassified vanilla pods, cocoa powder and cane sugar in a glass jar. Shake the jar to mix well. Leave to stand for 1-2 weeks before serving.
Ingredients: 1 liter white rum, 4 split declassified vanilla beans, 1 tablespoon cardamom seeds, 50 g cane sugar.
Preparation: Lightly crush the cardamom seeds to release their aroma. Place the rum, declassified vanilla pods and cardamom seeds in a glass jar. Add the cane sugar and shake the jar to mix well. Leave to stand for 1-2 weeks before serving.

Elles sont moins belles car déclassées. ça ne me gène pas car ce qui m'intéressait, c'était d'avoir des gousses parfumées et riches en grains. Ce qui est parfaitement le cas. le prix est plus qu'abordable! J'ai suivi les recommandations concernant la conservation (dans l'alcool) et les autres recommandations pour ne pas avoir de perte (la gousse usagée dans le sucre).
