Discover a unique batch from the Sambava region, matured for over 24 months in trunks. The pods offer an intense bouquet combining red fruit notes (strawberries, raspberries) with a heart note of caramel, rose and vanilla powder. The vanilla beans are dry, over-ripe and split, giving way to a remarkable aromatic intensity. An ideal vintage for long macerations or rhums arrangés.

This is the Vanilla I prefer, the one that takes me back to the most beautiful plantations of Madagascar.

Red Bourbon Vanilla Split "Sambava" is drier. Why?

The weight of a pod does not determine its quality. As a professional, you weigh the water content.

At our level, in vanilla importation, after years in the industry, here are the most important points:

- Vanillin content (main molecule for vanilla notes)

- Aromatic amplitude. On this lot: Intense bouquet of red fruits (strawberries, raspberries, blackberries, redcurrants) Heart notes: Caramelized intensity, Rose, Powdery vanilla.

- Harvest period

- Batch ripening, in accordance with each importer's own specifications (in this case, long traditional ripening).

- Nutrients in the soil from which the pods come, indigenous terroir, type of cultivation (shade-grown, agro-forestry, intensive...)

- The end result in the creations of our customers, both chefs and individuals.

Finally, the vanilla that the industry buys to create vanilla extracts is only split or unsplit red vanilla. Like us, they focus on the quality of the batch, not the visual aspect. Today, 90% of vanilla imported into the food industry is red vanilla, for the quality of its aromatic content (although dry, it is much more intense).

Bonjour C'est ma 2ème commande et je suis très satisfaite de mes achats. Je conserve mes gousses de vanille dans un bocal avec un fond de vodka et cette fois ci les gousses iront dans un bocal avec de la vodka pour macérer pendant 1 an et devenir de l'extrait de vanille.
