My passion for vanilla drives me to choose different vanillas. This is an extraordinary product. Depending on the country it comes from, it offers a new experience every time. Fruity, musky, woody, cocoa notes, each vanilla pod offers a unique taste journey. During my travels to vanilla and spice-producing countries, I have established partnerships with producer-collectors. You'll discover that each vanilla bean has its own unique nose and aromatic amplitude, depending on its region of production, maturation and variety. Respect for a long, traditional maturing process is also one of my hallmarks. The result: a black Bourbon Gold vanilla with full-bodied cocoa notes, a drier Uganda vanilla with wild notes, or a very floral Papuan vanilla. Every year, I do my utmost to help you discover new vanilla aromas. My ambition is to help my customers understand that the fragrance of real vanilla can be very different from what we imagine. It's often a discovery when you receive my selections for the first time. I'm looking for aromatic intensity, power, feminine or wild notes that will make me "vibrate" and delight my customers. My aim: to discover new harvests year after year, superb vanillas with exotic notes that make you travel just by smelling them. And when you taste them, you'll enjoy an explosion of flavors. Here are the vanillas I offer on my site. The one from Guadeloupe is on the verge of extinction, so you won't find it here (for the time being), but I thought I'd pay it a tribute.

Mexican vanilla

Mexico is the original home of vanilla. Not everyone knows this, since it's now Madagascar that produces most of the world's vanilla. For the record, the Totonaques cultivated vanilla long before they were colonized by the Spanish. The latter discovered Mexican vanilla in the 16th century and decided to produce it. But what they didn't know was that in Mexico, an endemic bee naturally pollinated the vanilla flowers. It wasn't until the 19th century and the intervention of Edmond Albius, a slave from Reunion Island, that the principle of pollination was understood and vanilla was produced for the first time in the Indian Ocean. Bourbon vanilla has been cultivated ever since. Mexican vanilla is therefore a rarer product. It's not lacking in subtlety, with its cocoa, spice and sweet notes reminiscent of red fruit. You'll appreciate its powerful flavors in the mouth to enhance all your recipes.

Bourbon Gold vanilla from Madagascar

Madagascar now produces 80% of the world's vanilla. Fleshy pods with magnificent black beans. Bourbon vanilla takes its name from a family of French kings. It is only produced in 5 countries: Madagascar, Mauritius, Reunion, Seychelles and Comoros. No other vanilla can obtain this appellation. So, as with the Grands Crus, Bourbon vanilla is a geographical appellation. I wanted to offer you a Bourbon vanilla that would surprise you with its intensity. Each year, it's important that my Bourbon vanilla from Madagascar retains its warm, cocoa notes. When I received my first batch in 2019, I was surprised to discover base notes that tended towards caramel. There are many producers in the Sava region, each with their own particular expertise. Mastering vanilla cultivation requires a perfect understanding of every stage of production, from cultivation to shipping. Planting, climatic hazards, harvesting at full maturity or not, maturing in wooden trunks - everything must be mastered to perfection. Of course, this has an impact on the price, but you only have to taste a low-end vanilla to understand that vanilla, like wine, is a noble product that takes time to mature and satisfy your taste buds. What I propose, and strive to find, is a Bourbon vanilla that reflects my signature, with a Bourbon vanilla refining that's off the beaten track. I want my customers, when they smell my vanilla, to breathe in all my work. Do you really want to discover Bourbon vanilla with a different nose and intensity? Trust David Vanille. Papua New Guinea vanilla

When you start discovering something other than Bourbon vanilla from Madagascar, you quickly discover vanilla from Papua New Guinea. Papua offers two varieties: Planifolia vanilla (the most common) and Tahitensis vanilla, which is the same variety found in Tahiti. While Tahitensis is aged in Papua identical to Planifolia, the difference lies in the fact that the former is not scalded. The notes of this origin are suave and very exotic. The intensity of its aromatic palette offers characteristic notes of flowers and leather, sometimes slightly roasted. This vanilla is particularly appealing to me. The work of Papuan communities over the last twenty years or so has been remarkable in promoting this singularity. There remains a major challenge in training producers and collectors to offer vanilla that is properly refined without developing sprouts. All too often, samples don't meet my requirements: the moisture content is too high and the vanilla is poorly refined, lacking in strength. My aim is to offer you a far superior quality, with a long maturation period and notes faithful to the typicity of Sauvage vanilla from Papua New Guinea. Tahitian vanilla - Black Pearl

A full-bodied pod, floral notes and a unique caramel-speculoos aroma - that's what Tahitian vanilla has to offer. Once again, I've taken the time to seek out the best vanilla from French Polynesia to bring you a little gustatory gem. This full-flavored vanilla has nothing to envy of the Bourbon vanilla we mostly find. Vanilla tahitenis, vanilla planifolia, these two vanillas are produced in Tahiti to vary the pleasures. Far rarer than Madagascar vanilla, this product is a must-try. Great chefs such as Guy Savoie have adopted this vanilla. Are you ready to try it?

Uganda vanilla - Grand Cru

Looking for rarer origins? Uganda is a country that has been struggling to make a name for itself in the vanilla industry for some years now. It's very difficult for me to find top-quality black vanilla in this area at the moment. The last batch I received was re-refined and sorted by myself, as the moisture content and quality did not correspond to my specifications. The result is a refined vanilla with wild notes that will be appreciated in macerations. I am particularly demanding when it comes to the quality of my vanilla. An exceptional product has to be treated in the best possible way, and my customers have high standards too, which I have to meet. GRANDIOSE" Black Gold Tsy Taitry Pompona vanilla from Madagascar

Another vanilla to discover is Pompona "GRANDIOSE" Black Gold. It is produced in Madagascar near Andapa, Sambava and Antalaha. This vanilla benefits from a long maturing process and features long, full-bodied pods. The quality of this little-known vanilla is exceptional. Its fruity, caramelized notes are simply enchanting. If you're looking for a very rare product, this is the vanilla for you.

Pompona vanilla from Guadeloupe: an endangered vanilla

Guadeloupe was once a vanilla-producing region, but the industry has all but disappeared. Of course, there are still many vanilla plantations in Guadeloupe, remnants of an era when the island's vanilla was renowned throughout Europe. A few enthusiasts continue to develop agroforestry projects, growing vanilla under shade or in undergrowth. Most of the planifolia vanilla harvested is processed using the Bourbon technique (scalding, steaming, refining), while a minority "comb" the vanilla, like the one I love and select exclusively. The vanilla producers in Guadeloupe who perpetuate a refining process by "scarifying" the vanilla are safeguarding a unique savoir-faire in the French West Indies. I can only encourage this approach, which enables vanilla to develop exceptional and singular notes. Scarified Guadeloupe planifolia vanilla develops musky, woody and deep notes. The scarified Guadeloupe Pompona vanilla, on the other hand, offers balsamic, floral, full-bodied notes that no other vanilla can match. The latter is a variety that has virtually disappeared from the globe. It's rarer than a diamond.

Buy your vanilla by the kilo

At David Vanille, it's up to the individual to decide how much vanilla to buy. While some order one or two pods, others buy vanilla by the kilo. I chose to offer this service for two reasons. A kilo of vanilla means over 300 beans, depending on size and caliber. Vanilla lovers who cook a lot with this spice choose to place group orders. Sold by the kilo, my vanilla is less expensive.
