A COUP DE COEUR - What aromatic power! I strongly invite you to discover this Grand Cru vanilla worked in the traditional way by my teams. Fully matured pods, a firework of aromatic amplitude! A higher dry matter rate, a reduced humidity rate, allowing the aromatic precision of my harvest to shine through. It is that of my beginnings on the beaches of Sainte Anne (Guadeloupe).

The Red Bourbon Vanilla "Médaille d'Or" is drier, why?

The weight of a pod does not determine its quality. As a professional, you weigh the water content.

At our level, in the import of vanilla, after years in the industry, here are the most important points:

- Vanillin content (main molecule for the vanilla notes only)

- Associated aromatic amplitude On this batch: Main notes: Vanilla, Red fruits (Raspberries, Red currants), Forest fruits (Blackberries, Blueberries) Heart notes: Slightly woody, Very candied.

- Harvest period

- Refining of the batch, respect of the specifications of each importer (here, long traditional refining as in the past).

- Nutrients of the soil from which the pods come from, native soil, type of cultivation (shade, agro-forestry, intensive...)

- Final result in the creations of our customers chefs and individuals.

Finally, the vanilla that the industry buys to create vanilla extracts is only split or unsplit extraction vanilla. Like us, they focus on the quality of the batch and not on the visual. Today, 90% of the vanilla imported into the food industry is still extraction vanilla for its quality of aromatic content (although dry but much more intense).

Bonjour, Le poids d'une gousse ne fait absolument pas sa qualité. Vous pesez en tant que professionnel un teneur en eau. Une gousse d'un calibre similaire, si de la même variété, à le même nombre de grains environ. A notre niveau, dans l'importation de vanille, après des années dans la filière, voici les points les plus importants : - Teneur en vanilline (molécule principale pour les notes uniquement vanillées) - Amplitude aromatique associée Sur ce lot : Notes Principales : Vanillées, Fruits rouges (Framboises, Groseilles), Fruits des Bois (Mûres, Myrtilles) Notes de Cœur : Légèrement boisées, Très confites. - Période de récolte - Affinage du lot, respect du cahier des charges propre à chaque importateur (ici, long affinage traditionnel comme d'antan). - Nutriments du sol dont sont issues les gousses, terroir indigène, type de culture (ombrière, agro-foresterie, intensive...) - Résultat final dans les créations de nos clients chefs et particuliers. Pour finir, la vanille que l'industrie achète pour créer des extrait de vanille est uniquement de la vanille extraction fendue ou non fendue. Comme nous, elle se focalise sur la qualité du lot et non sur le visuel. Aujourd'hui, 90% imports dans le secteur agro-alimentaire reste la vanille extraction pour la qualité de ses teneurs aromatiques (pourtant sèche mais bien plus intense).
