Located above New Caledonia, Vanuatu is a small country made up of about 80 islands. If you are familiar with New Caledonian vanilla, Vanuatu vanilla is more confidential. This does not detract from its quality, quite the contrary.
This heavenly territory is home to vanilla plantations that flourish in an environment where the climate is extremely favourable to the development of magnificent vanilla pods. Vanilla trees flourish in the volcanic soil of the Melanesian archipelago, which gives it its specific taste.
The Vanuatu people grow vanilla planifolia in the heart of the Coral Sea. If this name is familiar to you since it is the most cultivated vanilla, ahead of vanilla pompona and vanilla tahitensis, you will discover new gustatory horizons here. If the nature of the orchid itself is important, the land on which it is grown also has an impact on the taste of vanilla.

Brown, shiny and with some marbling, they are very fleshy, this vanilla asserts its generous character. The pods are picked when they are very ripe and are matured for a long time to develop all the flavours of this vanilla.

Cultivated in the heart of the Coral Sea, this vanilla goes perfectly with fish. As a starter, I suggest a small tartar of sea bream to whet your appetite. Take some nice fillets of sea bream and cut them into small cubes. Slice an onion and finely chop some chives. Split the vanilla pod and remove the seeds, which you will place in olive oil with lemon, mustard, salt and pepper. Add the onion and chives and mix well. Add the sea bream and put it in the fridge for one hour.
Prepare your papillote by putting cod fillets, salt, pepper, olive oil and grated vegetables (courgettes, carrots, etc.) according to your taste. Scrape a vanilla bean, remove the seeds and mix them with the butter. Brown a shallot in a pan with white wine and let it reduce. Add the vanilla butter and then the cream, making sure to whip it well (you can add a little flour to thicken it, but not too much). Serve your fish and drizzle with Vanuatu vanilla butter sauce.
Sometimes the simplest recipes are the best. To make this extremely moist cake, whip fresh cream and whole eggs in a bowl. In another bowl, mix flour, sugar, yeast and split Vanuatu vanilla beans. Add the powders to the cream/egg mixture as you go along, making sure to whisk well to avoid lumps. Pour into a buttered pan and bake at 180° for 45 minutes.
