What is Vanuatu vanilla?

Located above New Caledonia, Vanuatu is a small country made up of some 80 islands. While you may be familiar with New Caledonian vanilla, Vanuatu vanilla is a little less well known. This in no way detracts from its quality, quite the contrary.

This heavenly territory is home to vanilla plantations that flourish in an environment where the climate is extremely favorable to the development of magnificent vanilla beans. Vanilla trees flourish in the volcanic soil of the Melanesian archipelago, which gives it its distinctive taste.

In the heart of the Coral Sea, the people of Vanuatu grow vanilla planifolia. If you're familiar with this name, since it's the most widely grown vanilla ahead of vanilla pompona and vanilla tahitensis, you're about to discover new taste horizons. If the very nature of the orchid is important, the land on which it is grown also has an impact on the taste of vanilla.

Sea bream tartar with Vanuatu vanilla

Grown in the heart of the Coral Sea, this vanilla goes perfectly with fish. As a starter, I suggest a small tartare of sea bream to whet your appetite. Take some nice fillets of sea bream and cut them into small cubes. Slice an onion and finely chop some chives. Split the vanilla pod, remove the seeds and place in olive oil with lemon, mustard, salt and pepper. Add the onion and chives and mix well. Add the sea bream and chill for one hour.

Cod papillote with vanilla sauce

Prepare your papillote with cod fillets, salt, pepper, olive oil and grated vegetables (zucchinis, carrots, etc.) to taste. Scrape a vanilla bean, remove the seeds and mix with butter. Brown a shallot in a saucepan with white wine and reduce. Add the vanilla butter, then the cream, making sure to whisk well (you can add a little flour to thicken, but not too much). Serve your fish and drizzle with Vanuatu vanilla butter sauce.

Vanuatu vanilla cream cake

The simplest recipes are sometimes the best. To make this extremely moist cake, whip crème fraîche and whole eggs in a bowl. In a separate bowl, mix flour, sugar, baking powder and split Vanuatu vanilla beans. Add the powders to the cream/egg mixture as you go, taking care to whisk well to avoid lumps. Pour into a buttered tin and bake at 180° for 45 minutes.
