My Gourmet vanilla is an exceptional vanilla. It is not well known, yet it deserves the utmost respect. This Ugandan vanilla grows on the green slopes of the east of the country. Here, all the climatic and soil conditions are present to make a great vanilla. But my Gourmet vanilla is not like any other product. It's not all about the soil or the climate, but about the specific cultivation. You are probably familiar with late harvest when it comes to wine. The Ugandan producers I found use this principle by harvesting the pods at full maturity. They are so mature that some are already split at the time of harvest. It is this specific treatment of the pods that makes this product such a strong tasting vanilla.
Uganda Gourmet Vanilla is a product with very cocoa-like and intense flavours. I like this very vanilla and wild aspect that brings character to the dishes. The heart notes are caramel, hay, woody, phenolic, balsamic and vanilla powder for a vanilla that is simply inimitable.
The plant that produces Uganda vanilla is the vanilla planifolia, the same as that of Madagascar. However, its pods are a little larger and a little less fatty. After harvesting, they are processed like all vanillas following a precise process, the last step of which is drying, a crucial step that will reveal all the flavours of this exceptional product.

Split the vanilla pods to remove the seeds and place them in a bowl with butter. Mix these two ingredients together. Shell the prawns and cut them in half lengthwise. Place the butter on the body of the prawns and put in a hot oven (210°) for about 10 minutes. This recipe is both ideal as a starter and as an aperitif.
This delicious recipe is simple to prepare. Sauté onions with butter in a stewpot. Add the scampi heads and claws. Simmer for a few minutes and add white wine. Add fresh cream and a split vanilla pod and cook over a very low heat for 20 minutes. Pass through a sieve. Cook your cod and serve the cream with basmati rice, broccoli and a few diced carrots.
Separate the egg whites from the yolks. Whip the egg whites until stiff. Whisk the yolks with the sugar, vanilla beans taken from a pod and orange blossom water. Add the melted butter and flour and mix. Then add the milk and the egg whites. Pour the batter into a mould and bake in a preheated oven for 45 minutes to an hour at 160°. To check if the cake is cooked, stick a knife into it. If it is dry, your cake is cooked.
