A quality of vanilla that I love, it is one of my favorites. This batch is starting to develop vanillin crystals on the pods (vanillin saturation on the surface). The quality of the maturation is remarkable after being put in a trunk, as in the past, for more than 12 months minimum. The aroma is sweet and full-bodied at the same time. Papua vanilla is a bit of a crush for me. This vanilla is still unknown today, and for good reason: Madagascar vanilla represents more than 80% of the world market, it is difficult to make a place for yourself in this sector. And yet the red vanilla of Papua is a little wonder. Even if it is confidential, it is a vanilla of very good quality produced mainly in the region of Sepik by small communities. Here, the vanilla culture is a driving force since it allows to finance schools and to set up various infrastructures. I met with different producers before finding the ones who would be able to offer you the best vanilla.
This Papuan vanilla is a gustatory jewel. It is distinguished by its main notes musky and wild, notes of dry grass and honey. Its woody aromas have something comforting, sweet and powerful at the same time to meet the requirements of the greatest vanilla lovers who seek the exception.
Bourbon vanilla comes from the vanilla planifolia. The Papuan vanilla beans come from the vanilla pompona. This vanilla tahitensis comes from the same species as the one cultivated in French Polynesia. Its culture is long and requires a real patience. Indeed, it takes 3 years before the first flowers appear on the orchid that produces vanilla. It is then necessary to fertilize them, again a long and meticulous work. When your beautiful vanilla pods develop, they follow a very precise process: scalding, steaming, drying and refining. They then develop all the flavors to offer you a totally unique taste.
It's time to go to the table and live a moment full of power and magic. The red vanilla of Papua will reveal all its flavors in your recipes. It knows how to transform a good dish into a very good dish. And what I like most of all with vanilla is its ability to integrate different recipes, whether sweet or savory.
Cut the tuna into small cubes. Cut the pineapple in the same way. Marinate your ingredients in a mixture of fresh chopped coriander, lime, olive oil, salt, pepper and vanilla beans taken from your bean. Leave in the fridge for about an hour so that the juice can give your tuna and pineapple their full flavour.
An exceptional dish requires high quality ingredients. I suggest a delicious recipe for scallops with vanilla, it is surprising and effective at the same time. Start by preparing your vanilla sauce. Take the coral of the scallops and brown them in olive oil. Add a rather fruity white wine and bring to a boil to reduce the juice. Lower the heat and add fresh cream and the seeds of your Papuan vanilla bean. Add pepper and let cook for about 5 minutes on low heat. Cook your scallops in a frying pan with olive oil. Be careful, the pan must be very hot to seize your scallops. Leave on a high heat for 2 minutes on each side. Serve the scallops and the sauce with basmati rice.
This is a simple recipe, but full of sweetness and freshness. This is a melt-in-your-mouth recipe that is perfect for the end of a meal. Split your Papuan vanilla bean in half and place it in cold milk. Let it infuse for several hours. Mix milk, egg yolk and flour in a bowl. Bring the milk to a boil. Remove the vanilla bean and pour half of the milk over the mixture. Stir and return the mixture to the saucepan and let it heat up while stirring well. The cream will thicken. Pour it into ramekins and chill for a few hours.
