Papua Vanilla Tuna Tartar

Cut the tuna into small cubes. Cut pineapple in the same way. Marinate your ingredients in a mixture of fresh chopped coriander, lime, olive oil, salt, pepper and vanilla beans from your bean. Leave it in the fridge for about an hour to allow the juice to give all its flavour to your tuna and pineapple.

Scallops with vanilla

Exceptional dishes require high quality ingredients. I offer you a delicious recipe for scallops with vanilla, it is surprising and effective at the same time. Start by preparing your vanilla sauce. Take the coral from the scallops and fry them in olive oil. Add a rather fruity white wine and bring to the boil to reduce the juice. Lower the heat and add fresh cream and the seeds of your Papua vanilla bean. Add pepper and cook for about 5 minutes over low heat. Cook your scallops in a frying pan with olive oil. Be careful, the pan must be very hot to sear your nuts. Leave on high heat for 2 minutes on each side. Serve the scallops and the sauce with basmati rice.

Homemade vanilla cream

It's a simple recipe, but full of sweetness and freshness. This is a melting and reassuring recipe that goes perfectly at the end of the meal. Split your Papua vanilla bean in half and place it in cold milk. Leave to infuse for several hours. Mix milk, egg yolk and flour in a salad bowl. Bring the milk to the boil. Remove the vanilla bean and pour half of the milk over the mixture. Stir and then put it back into the pan and let it heat up, stirring well. The cream will thicken. Pour it into ramekins and place in the cold for a few hours.
