1kg Dry Vanilla Beans +10cm

Papua New Guinea

A quality of vanilla that I love, it is one of my favorites. This batch is starting to develop vanillin crystals on the pods (vanillin saturation on the surface). The quality of the maturation is remarkable after being put in a trunk, as in the past, for at least 12 months. The aroma is sweet and full-bodied at the same time. These pods remind me exactly of the quality of the scarified vanilla pods from Guadeloupe of my favorite producer.

What is Papua dry vanilla?

Papua vanilla is a bit of a crush for me. This vanilla is still unknown today, and for good reason: Madagascar vanilla represents more than 80% of the world market, it is difficult to make a place for yourself in this sector. And yet the dry vanilla of Papua is a little wonder. Even if it is confidential, it is a vanilla of very good quality produced mainly in the region of Sepik by small communities. Here, vanilla cultivation is a driving force since it allows to finance schools and to set up various infrastructures. I met different producers before finding the ones who would be able to offer you the best vanilla.

What is the flavour of Papua dry vanilla?

This Papuan vanilla is a gustatory jewel. It is distinguished by its main notes of musky and wild, dry grass and honey. Its woody aromas have something comforting, sweet and powerful at the same time to meet the requirements of the most demanding vanilla lovers who are looking for the exceptional.

The harvest of the dry vanilla of Papua

Bourbon vanilla comes from the vanilla planifolia. Papua vanilla beans come from the vanilla pompona. This vanilla tahitensis comes from the same species as the one cultivated in French Polynesia. Its culture is long and requires a real patience. Indeed, it takes 3 years before the first flowers appear on the orchid that produces vanilla. It is then necessary to fertilize them, again a long and particularly meticulous work. When your beautiful vanilla pods develop, they follow a very precise process: scalding, steaming, drying and maturing. They then develop all the flavours to offer you a totally unique taste.

How to use Papua dry vanilla?

It's time to go to the table and live a moment full of power and magic. The dry vanilla of Papua will reveal all its flavors in your recipes. It knows how to transform a good dish into a very good dish. And what I love most about vanilla is its ability to be used in a variety of recipes, both sweet and savoury.

Our recipe ideas with dried vanilla from Papua

Tuna tartar with Papua vanilla

Cut the tuna into small cubes. Cut the pineapple in the same way. Marinate your ingredients in a mixture of fresh chopped coriander, lime, olive oil, salt, pepper and vanilla beans taken from your bean. Leave for about an hour in the fridge so that the juice can give all its flavour to your tuna and pineapple.

Scallops with vanilla

When you say exceptional dish, you say high quality ingredients. I suggest a delicious recipe for scallops with vanilla, it is surprising and effective at the same time. Start by preparing your vanilla sauce. Take the coral of the scallops and brown them in olive oil. Add a rather fruity white wine and bring to the boil to reduce the juice. Lower the heat and add some fresh cream and the seeds of your Papuan vanilla pod. Add pepper and cook for about 5 minutes over low heat. Cook your scallops in a frying pan with olive oil. Leave on a high heat for 2 minutes on each side. Serve the scallops and the sauce with basmati rice.

Homemade vanilla cream

This is a simple recipe, but full of sweetness and freshness. This is a melt-in-your-mouth, comforting recipe that goes down well at the end of a meal. Split your Papuan vanilla bean in half and place it in cold milk. Leave to infuse for several hours. Mix milk, egg yolk and flour in a bowl. Bring the milk to the boil. Remove the vanilla pod and pour half the milk over the mixture. Mix and then put it back into the pan and let it heat up while mixing well. The cream will thicken. Pour it into ramekins and place in the refrigerator for a few hours.

The health benefits of dried vanilla from Papua

Vanilla is a delicious product that has many virtues. It is an extremely healthy natural product recognized as an antidepressant. Its soothing and comforting side makes it the perfect ally of your morale. It stimulates the nervous system and helps fight against fatigue. Rich in polyphenols, it fights against cell aging. It is also a powerful antiseptic and a perfect product to fight against digestion problems. And don't forget that some people believe it has aphrodisiac properties.
