  • Vanille Bourbon: why this appellation?

    A few centuries ago, Reunion Island was named Bourbon Island, after an important dynasty that ruled France. After Mexico, it was in the Indian Ocean that vanilla was cultivated. And it is more precisely on Reunion Island, thanks to a slave who understood the principle of pollination of the flowers of the vanilla tree, this species of orchid, that vanilla was first cultivated. When it came to giving a name to this vanilla, Bourbon was the name that imposed itself. Bourbon vanilla is only produced in the Indian Ocean, and more precisely in the following territories: Madagascar, Comoros, Reunion, Seychelles and Mauritius.

    A vanilla from Madagascar long refined

    My Bourbon vanilla is a little treasure that I found in the Sava region, in the north-east of the island of Madagascar. Here, all the conditions are there to cultivate and shape a high quality product. An adapted climate, rich soil, low altitude, passionate producers who perfectly master their art, difficult to find better. The Bourbon Gold vanilla 16-17 cm of Madagascar that I propose to you is the fruit of a long refining process. It has been stored for several months in wooden trunks and today offers a humidity level of 25-30%. This gives us beautiful quality pods with cocoa and fruity notes with beautiful black grains eager to come and mix with all your recipes.

    Some recipes to taste your Bourbon vanilla from Madagascar

    Most of the time, vanilla is associated with sweet dishes. Custard, crème brûlée, custard, whipped cream, flan, yoghurt, ice cream, cakes, ganaches, vanilla folds in four to magnify your desserts. But it also knows how to sublimate your savoury dishes. A good coconut chicken with vanilla, monkfish with a vanilla white butter sauce, the possibilities are simply infinite.

    J'ai mis 2 gousses dans mon gateau de semoule et peu de goût je suis un peu déçu je testerai 3 la prochaines fois

    Bonjour Aurélie, Il n'est pas nécessaire de mettre autant de gousses dans votre préparation. Une vanille de cette qualité à simplement besoin de macération sur une heure bien plus, de basse température. Une demi-gousse ou une gousse de vanille Bourbon Gold taille L suffit après une longue macération pour offrir toute son amplitude. Concrètement, c'est très simple : une demi gousse de vanille, 50cl de lait, 20g de sucre, une heure à feu doux. Laisser reposer. Goûter. La vanille que vous avez reçu est la même que celle que j'envoi à mes grands chefs. Merci d'avance de tester ma base ou le principe. Passez une bonne journée, Au plaisir, David
