When we think of vanilla from Madagascar, instinctively we think of Bourbon vanilla. And for good reason, it is the most produced vanilla in the world. This appellation refers to vanilla produced in Madagascar, Reunion Island, Seychelles, Comoros and Mauritius. If Bourbon vanilla is necessarily produced in these territories, a vanilla produced here does not necessarily have the Bourbon appellation. So, during my travels, I have travelled all over the Sava region in Madagascar to find the best vanilla. I found the Bourbon that I was eagerly awaiting, but I also discovered a real nugget in the districts of Sambava, Antalaha and Andapa: Black Tsy Taitry vanilla. This product is simply incredible, I am so lucky to have been able to discover it, taste it and share it with you. It is an extremely confidential production, about 0.001% of the vanilla harvest in Madagascar. So if you were surprised by its price, part of the explanation is there. This vanilla is like a great vintage wine. When only a few bottles are marketed, it becomes a rare and therefore expensive product. But this price is also explained by its taste. This powerful vanilla offers bewitching fruity and caramelized notes. Its pods are generous and will give you a new perception of vanilla. The particularity of Black Tsy Taitry vanilla, beyond its nose and taste, is its shape. This vanilla has been produced from two vanilla trees: the vanilla planifolia and the vanilla pompona, which is not the most common. 75% of its genetic line is inherited from the first one, which is why it has beautiful pods over 17 cm long. The vanilla pompona gives it the aromatic power that makes all the difference. What also surprises with this vanilla from Madagascar is its very large pod and its dark colour. Imagine splitting it for a moment to discover a quantity of black beans that will sublimate your cooking. It's simply magical. This vanilla is the fruit of a long refining process that has allowed it to develop all its aromas to obtain a real gustatory treasure.
