The Papua New Guinea vanilla I'm offering is a Tahitensis vanilla. It is a species of orchid hybrid between vanilla planifolia and a kind of vanilla odorata. This vanilla is the result of a long work that the growers I have selected have mastered perfectly. The vanilla plant only produces flowers after 3 years. These must be pollinated to produce beautiful mature pods after 8 or 9 months. For the record, it was a Reunionese slave, Edmond Albius, who discovered the principle of pollination in the 19th century. Previously, only the Mexicans produced vanilla. When the pods are ready to be harvested, they follow a very specific process: - scalding; - steaming; - drying; - maturing. My 11-13 cm Tahitensis vanilla from Papua New Guinea is the result of a long refining process which gives it a moisture content of 20 to 25%. This makes it possible to benefit from semi-dry pods.
My Papua vanilla is a rare gem. In fact, Madagascar produces the majority of the world's vanilla. However, the Tahitensis vanilla from Papua is quite exceptional.
