The refined Bourbon vanilla, known as Vanille Brune or Vanille Rouge (for its reddish reflections in places) represents the largest volume exported from Madagascar. It is used by flavourists, perfumers and food processing companies for the quality of its macerates and infusions.
It is important to understand that just because a vanilla bean is drier does not mean it is not good quality. Those who will simplify the explanation for you have not understood everything. A refined Bourbon vanilla bean has a moisture content between 20 and 25%. Its level of vanillin, the main aromatic molecule of a vanilla bean, will often be the same as that of a fatter and wetter vanilla (like Bourbon Gold from Madagascar). The basic pure "vanilla" amplitude as in a vanilla ice cream will be well present. The fact that a vanilla bean is drier with a vanillin content similar or close to that of a Bourbon Gold vanilla will allow it to have a more precise nose.
The aromatic on the nose will propose notes with a precision that no Bourbon Gold vanilla can offer. To put it simply, when a (wetter) Bourbon Gold vanilla offers round and warm cocoa notes with a creamy finish (the fruity notes being different according to the year, harvest, maturing, terroir...), the refined Bourbon vanilla will have an exceptional aromatic precision on the nose (main notes, base notes, final notes).
Why do I love Vanilla Bourbon Refined?
Visually, the refined pods are fine with a pearly sheen due to the essential oils on the surface. When you run your fingers over a clove, often a few grains are deposited on the fingers. These are split pods that have been separated from the unsplit pods during handling of the same batch. The introduction is superb.
To the nose, it is difficult to explain what it "sends" but here is what my heart (and of course my nose) can tell you:
- Frank notes of honey with a floral attack, sweet, light notes of roasted peanuts.
- Very fruity base notes: raspberries, blueberries, wild strawberries.
- Final notes: creamy, raw cocoa and hay.
I like the precision of this vanilla and its aromatic. As with other vanilla beans, origins and varieties, the longer your vanilla bean, the more its aroma will be "worked" and "complete".
A long vanilla bean will very often have a higher level of vanillin than a small vanilla bean (11 to 13cm).
