Madagascar represents 80% of the world production. The flowers of the vanilla tree are fertilized to produce beautiful pods after about 9 months. Then, the vanilla is scalded in water at 60-63°. The steaming consists then in placing the pods in covers in wooden boxes. This step allows the beans to lose their skin and to discover this magnificent chocolate color. The drying is done during several weeks by alternating sun and shade. The maturing process lasts between 2 and 4 months. The Bourbon vanilla pod is stored in a trunk. A verifier ensures that the pods are in perfect condition, removing those that are moldy to preserve the others. This is when the vanilla develops its vanillin content and all its flavors.
