WHAT IS THE BLACK GOLD TSY TAITRY POMPONA VANILLA FROM MADAGASCAR?

Discovered in 2012 during my first trip to Madagascar, it was my most beautiful memory of the country's plantations. I had negotiated a few kilos in a village in the region of Andapa. This quality is really exceptional and represents a tiny part of the vanilla harvest of Madagascar. On the spot, I was surprised to see that nobody was interested in this variety. The producers had explained to me that there were no buyers for this type of vanilla. The volumes were very small and only some plantations had a few vanilla trees.

This very large vanilla was used at the time to make vanilla-based braided objects. It seemed incredible to me that no one was interested in this variety. As I researched, I came to understand that it was the result of a "back-cross" between the vanilla planifolia variety (widely grown worldwide) and the vanilla pompona variety found mainly in the Caribbean and Mexico. The result of this first hybrid was then again "back-crossed" with a planifolia variety. It seems that the Vaitsy cultivar from Costa Rica could also be from the same hybrid strain, which is remarkable

WHY SHOULD I DISCOVER MY BLACK GOLD TSY TAITRY POMPONA VANILLA FROM MADAGASCAR?

This vanilla is a vanilla for my clients who are looking for rare products. When you discover this quality for the first time, you fall under the spell. Visually it is unlike any other vanilla. From the planifolia (75% of its genetic line), it has the length of the most beautiful vanilla pods of the harvest and an overall fruity nose. Veins are drawn along its pod like the bark of a tree. The pompona variety (25% of its genetic line) gives it its aromatic power which leaves in olfactory fireworks! One can easily perceive its fruity and caramelized notes from the opening of the bag. The more complex background notes of leather and coumarin bring its suave and wild richness.

When some people take special care in tasting great wines, I bring the same passion when I discover new batches of vanilla. Depending on the region of production and the know-how of the producer-processor, a vanilla will be completely different. One can find pods of the same variety but with an opposite aromatic profile. This observation is valid for all the vanilla beans and spices that I propose, fruit of my research and partnerships. The result is a quality that is "off the beaten track", an aromatic amplitude that allows us to make our recipes and our senses travel.

My eyes sparkle when I look at it. I go on a trip to the plantations of Madagascar when I look at its aromatic profile.
This vanilla is so singular, so rare. When we offer it to ourselves, we allow ourselves to discover a vintage, a great vintage of exception.

HOW TO USE THE VANILLA POMPONA BLACK GOLD TSY TAITRY OF MADAGASCAR IN COOKING?


If you like to use natural vanilla in your recipes, 2 to 4 cm of vanilla will replace a planifolia vanilla bean. To discover it, I invite you to make a vanilla syrup - long life. This recipe will allow you to use it easily in your desserts and to keep it on hand when you have people over.

In a vanilla arranged rum for your pastries (pancakes, crème brûlée, chocolate mousse) or simply as an aperitif. For a bottle of 1 liter of white rum 50°C, provide a vanilla pod Black Gold Tsy taitry. Maceration 1 month minimum without adding sugar.

To prepare a sauce that will accompany your fish or meat. You can infuse 3 cm of a vanilla pod Black Gold in 20 cl of fresh cream with 2 g of salt. This base can be improved with a mixture of curry spices or some herbs. Infuse at low temperature (70°C) for 15 minutes. It is simple and so delicious.

Bonjour Charlotte, Merci de bien lire quand vous faites vos achats pour comprendre ce que vous achetez. Les grains de vanille sont simplement des marquants visuels comme expliqué dans la fiche technique, ils sont utilisés par la majorité des grandes maisons afin de créer de l'insistance sur la création finale. Les gousses de vanille rouge de Papouasie, dans le résumé : De nombreuses gousses commencent à saturer en vanilline et à "givrer" signe d'une excellente qualité. Les gousses sont sèches visuellement mais très concentrées en vanilline et en molécule aromatique. Sur la photo, on voit bien que c'est de la vanille Rouge donc Sèche... Pour la vanille Pompona, cela doit être une blague : gousses de +20cm d'un calibre et épaisseur rare. Si les parfumeurs et aromaticiens achètent uniquement de la vanille rouge c'est pour une raison simple : on achète pas de l'eau mais on se concentre sur un teneur en vanilline et en molécules organoleptiques. Pour le reste, merci de nous le renvoyer, nous n'avons pas envie que vous soyez "choquée" comme vous le dites dans votre avis sur le site.
