To stop the natural oxidation of this Fujian Sencha tea, the leaves are thrown into a steam bath using the Japanese method. This is what makes it specific. Indeed, traditionally, the Chinese stop the oxidation of tea in metal basins. Here, even if this green tea comes from Fujian, the traditional Japanese method is respected.

The leaves are softened and then folded lengthwise, this is the rolling phase. It is essential because it will determine the notes of your green tea.
