The Zhejiang Gunpowder is a tea that is, by definition, not oxidized. It is therefore necessary to stop the oxidation quickly, otherwise the tea will be black.

First, the first and second leaves are plucked, which contain the most active principles to combine taste and virtues. The tea leaves are then roasted to remove the enzymes responsible for oxidation. They are heated to 100° in a metal basin for 30 seconds. Still soft, the leaves are then rolled. With the Zhejiang Gunpowder tea, we opt for a rolling in the shape of balls which bring all its specificity to this green tea. Finally, the leaves are dried, the aim of this stage being to bring the moisture content of the tea leaves down to 5 to 6%.
