Emperor's Lapsang Souchong black tea: a place for smoky flavors

Lapsang Souchong black tea is quite unique. No other tea has such a powerful nose and smoky, spicy aromas.

This tea comes from China. Lapsang Souchong is cultivated in the province of Fuijan, in the southeast of the country, on the Wuyi mountains. It is under the Qing dynasty that it would have been born, in the 17th century, even if it is still quite difficult to date the creation of a tea. According to the legend, the tea would have been smoked to be better preserved because of the presence of soldiers who would have prevented the natural process of tea production.

What are the flavors of the Emperor's Lapsang Souchong black tea?

This Lapsang Souchong tea is incredibly potent despite its low theine content. Smoked with woods such as spruce, cedar, cypress or pine, it reveals a smoky nose. To the taste, we find this smoked aroma, but also spicy. On the nose and on the palate, it is a firework, a totally unique feeling that makes all the charm of this exceptional tea.

Lapsang Souchong black tea from the Emperor: from the plantation to the cup

Lapsang Souchong tea is an oxidized tea, like all black teas, but also smoked. And this makes all the difference in the manufacturing process.

Your smoked black tea undergoes a first oxidation step that will be quite long compared to other black teas. Then, it is dried on wood, mostly pine and cedar, before being rolled and oxidized and dried again. This time, the tea leaves are placed in a bamboo basket over a spruce or cypress or even pine fire. It is during this last step that it will take on this incredible smoky taste.

Food and tea: David Vanille's pairings

Lapsang Souchong black tea is quite specific, we naturally think to consume it more easily with a salty dish than with a sweet one. Its smoky flavors are reminiscent of pork belly that we enjoy on the barbecue or in a dish of sausage lentils. The association is to be discovered.

You can also drink your Lapsang Souchong with a mushroom risotto, you will surprise your guests with such a food and tea agreement.

Another solution: slightly infuse your cooking water with Lapsang Souchong tea and cook your rice in it to flavour it.
