Black tea Ceylon O.P. - Nuwara Eliya : an Orange Pekoe between strength and sweetness

I present here an excellent black tea from Sri Lanka. This tea " black Ceylon - Nuwara Eliya is an Orange Pekoe (O.P.).

In tea, there are different grades, this will not have escaped the connoisseurs. If you are a novice in tea tasting, the grade allows you to determine the nature of the plucking and the size of the leaf.

An Orange Pekoe tea such as my Ceylon - Nuwara Eliya is made from young and well rolled leaves, the bud is already transformed into leaves. The plucking is fine and quite late compared to a F.O.P. (Flowery Orange Pekoe) tea.

Good to know: the term "orange" is in no way related to the citrus fruit. It is the name of a Dutch dynasty, Orange Nassau. The term here means "royal".

What are the flavors of the Ceylon O.P. - Nuwara Eliya black tea?

The black tea Ceylon O.P. - Nuwara Eliya is one of the best "Orange Pekoe" . We like its flavors with little tannin which are addressed to all in spite of a robust aroma. The opening of the bag betrays the presence of black tea, even with closed eyes. It is somewhat reminiscent of a black tea Breakfast that we like to taste to start the day. We discover floral notes, even slightly acidulous.

Ceylon O.P. black tea - Nuwara Eliya: from the plantation to the cup

Itis in Sri Lanka, in plantations located at an altitude of 1,900 m, that the tea plant that produces Ceylon O.P. - Nuwara Eliya black tea flourishes.

Nuwara Eliya is the name of a town located in the hills of central Sri Lanka. The tea plantations of the region are surrounded by trees, but also by aromatic plants that impact the taste of your black tea leaves and offer them its very floral aromas.

Black tea is an oxidized tea, its leaves undergo different treatments:

- withering: the tea leaves are placed on racks in a room between 20° and 24°. Fans installed under the racks allow for better air circulation. The tea leaf loses up to 50% of its moisture. Tea is initially a product very rich in moisture, several steps allow to obtain an optimal rate. During the withering, the leaf softens;
- the rolling: the leaf is here rolled and broken to optimize the oxidation stage. The leaf of the black tea Ceylon O.P. - Nuwara Elya is well rolled which gives a more powerful tea;
- the oxidation: it is here that we determine the profile of the liquor of the tea. During one to three hours, the tea leaves are placed on large plates in an airy room where the humidity is perfectly controlled;
- roasting: this is where the oxidation is stopped by placing the tea leaves in a dryer at 90° for 15 to 20 minutes;
- sorting: this is where the leaves are sorted according to the grade to offer you, with the Ceylon O.P. - Nuwara Elya black tea, an exceptional Orange Pekoe.

Food and tea: David Vanille's pairings

The Ceylon O.P. - Nuwara Elya black tea will be extremely pleasant at breakfast accompanied simply by toasted toast. However, the tea is much more surprising than it seems.

Indeed, if it is customary to consume it at breakfast, during breaks or as an afternoon snack, it is perfectly adapted to meals. We can imagine it perfectly accompanying a red meat barbecue or even a Chinese beef fondue with soy sauce. I invite you to make different tests in order to find the best association between food and tea according to your palate and your desires.
