Semi-fermented Oolong tea is an original tea that does not fit into any category. It is neither a green tea nor a black tea, but a tea halfway between these two products. It is also known as wu long, semi-oxidized tea or blue-green tea.
There are two types of Oolong tea, one is grown in China, the other on the island of Formosa in Taiwan. My semi-fermented Oolong tea comes from Taiwan, it undergoes a specific treatment to combine the sweetness of black tea and the power of a green tea. It is lighter and more floral than the semi-fermented Oolong tea that comes from China.
The semi-fermented Oolong tea that I propose here has a sweet nose that is reminiscent of puffed rice. In the taste, we discover floral and spicy notes between the sweetness of a black tea and the tonic aspect of a green tea. With a very nice aromatic palette, it is a very nice compromise between these two drinks.
Its very nature makes it a very specific tea that does not undergo the same treatment as other teas. Between black tea and green tea, the Oolong tea leaf undergoes the following operations: - withering: the tea leaves are placed under panels that filter the sunlight. As the moisture in the leaves begins to evaporate, they are placed in a very humid room; - sweating: the room in which the tea leaves are placed has a moisture content of about 85%. The temperature is 22 to 25°. The leaves are stirred. In Taiwan, sweating is a long enough stage for oxidation to reach 70%; - roasting: here, oxidation is stopped by heating the leaves at high temperature in large containers; - rolling: this is where the tea leaf is given its shape to determine its aromatic palette. Semi-fermented Oolong tea has very long, slightly crumpled leaves.
Semi-fermented Oolong tea can be enjoyed at any time of the day with a variety of dishes, whether savory or sweet. It can be perfectly appreciated with a grilled salmon steak with Asian flavors and soy sauce or sesame oil. In the morning, you can enjoy your semi-fermented Oolong tea with a fried egg and a piece of bacon, English style.
This tea will also find its place with a piece of goat cheese.
