Green tea from China is a non-oxidized tea that undergoes three treatments:
- roasting stops oxidation by killing the enzymes that are responsible for it. To do this, the tea leaves are heated to 100° for 30 seconds;
- rolling consists of rolling the leaves lengthwise to influence the notes at the time of tasting;
