Exotic fruit flavored black tea: from plantation to cup

Yunnan black tea is grown in China in the region of the same name located at the gateway to Burma and Laos. It flourishes on the high plateaus of this region and benefits from a warm and humid climate that allows it to develop according to the seasons.

After the leaves are picked from the tea plant, they are oxidized to obtain a black tea (which the Chinese call red tea). The tea leaves are placed on racks at a temperature between 20 and 24° for 18 to 20 hours. During this stage of withering, they are ventilated with forced air.

Then, the rolling is an important operation because it is it which will impact the power of your tea. The tea leaves are then placed in anoxidation room with a humidity level between 90 and 95% and a controlled temperature for 1 to 3 hours.

Then comes the roasting phase, here the leaves are heated for 15 to 20 minutes at 90°, the humidity level is suddenly lowered to 5%.

Finally, your Yunnan black tea is sorted and ready to be enjoyed.
