What is Muscovado - PREMIUM A+ sugar?

You know white sugar, brown sugar, cane sugar, but do you know Muscovado sugar? If not, it's time for me to introduce you to this high quality product. Muscovado sugar (or mascobado sugar) is a pure and complete cane sugar. It comes from Mauritius or the Philippines, I have chosen a farm located in Mauritius which produces a very qualitative sugar in the rules of art. If you have the feeling that you have eaten a similar sugar in Latin America, it is quite possible. However, it is called something else. Here you consume rapadura. In Colombia, it is known as panela.

What is the flavor of Muscovado - PREMIUM A+ sugar?

If Muscovado is a sugar, be prepared to taste a product that has nothing to do with what you know, especially if you consume white sugar. White sugar tastes like sugar, that's all. Muscovado sugar offers you a taste experience. This time, your sugar develops unique aromas between notes of caramel, licorice and vanilla. Those who do not know its origin might simply think that this sugar has been processed and flavored, but you are tasting a totally natural product. Muscovado sugar is sugar in its simplest expression, but in its greatest gustatory complexity.

How Muscovado sugar is made - PREMIUM A+

But how do we obtain this Muscovado sugar? First of all, we must harvest the sugar cane, which is the basis of this exceptional sugar. Then, we extract the juice from it, this juice is called " vesou ". It is filtered to remove impurities before being heated. This step of heating has for objective to remove all the liquid, it is the moment where this sugar is going to develop all its flavours. We then obtain a residue which is dried before being crushed. Muscovado sugar is not refined, that's why it keeps its beautiful brown color. Moreover, it is not separated from its molasses, which also affects its final color, much darker than brown sugar for example.

This brown sugar will naturally be used mainly in desserts. We can perfectly imagine a gingerbread with Muscovado sugar, a carrot cake or speculoos. However, if you like sweet and salty flavors, you will love to use this ingredient in more unexpected recipes.

Appetizer: Crème brulée with foie gras and Muscovado sugar

Here, you make a crème brulée recipe by adding mixed foie gras to your preparation composed of egg yolks, milk, cream and seasoning to your liking. When your preparation is ready, sprinkle it with Muscovado sugar and pass the flashlight.

The dish: Pork in caramel with Muscovado sugar

Caramel pork is an iconic dish for sweet and sour lovers. To make your caramel, you need water and Muscovado sugar. When your caramel is ready, add seasoned chicken stock (you can add soy sauce, ginger, etc. for Asian flavors). Place your pork pieces in this sauce and cook for about 20 minutes (depending on the thickness of your pork).

Dessert: Muscovado sugar cookies

Cookies are a simple Sunday recipe that allows you to enjoy sweet flavors without spending hours in the kitchen. Use your usual recipe and simply replace the white sugar or brown sugar with Muscovado sugar (be sure to reduce the amount of sugar, however, as its sweetening power is greater). Its vanilla and licorice flavors will revolutionize your cookies.

As Muscovado sugar is not separated from its molasses, it is rich in trace elements and vitamin B6. It also contains vitamins B3, B5 and B9.

Muscovado sugar is somewhat moist, it is best to keep it in a dry place in an airtight box. If, despite all your precautions, sugar crystals form, do not hesitate to put them in a blender.
