A southern plant with Indian origins, cumin is the most common spice used in North African cuisine. It is a herbaceous plant mainly cultivated in India, the Mediterranean basin or Central Europe. It produces white pinkish white ﬂeurs grouped into umbels, each of which produces two seeds. It is its long and fine light brown fruits that are used, whole or ground. Also called false anise or false dill, cumin has long, straight and greenish seeds. They are sometimes confused with caraway, although it is more fragrant than caraway. Cumin has been used for a very long time, since its small seeds have been found in the tombs of the pharaohs. It is said that his seed was King Solomon's favorite spice. The Arabs used it as an aphrodisiac, mixed with honey and black pepper. Cumin has long been considered a drug. The women of the harems in India smoked it with other spices such as cardamom and nails from giroﬂe. In high doses, its essential oil has proven narcotic effects
Fresh ground cumin is very aromatic, and if not carefully dosed, its presence will dominate the other flavours of your dish. Be careful not to have too heavy a hand. To store it properly, simply place your bag in an airtight box, in a cool and dark place.
In the salty
Cumin is used in the composition of massala or massalé, and the mixture of colombo spices. You can use your cumin in many oriental dishes, such as curries, tajines, couscous. To accompany your couscous, dilute two tablespoons of harissa sauce in a little water and add a pinch of cumin powder. Scent your homemade falafels with it. You can also use your cumin in Latin American dishes, such as tortillas, chili con carne... Sprinkle it on cubes of cheese aperitifs (Gruyère, gouda, edam...)
Cumin will work wonders in simmered dishes and in dishes with tomato sauce and sun-dried vegetables, such as shakshuka.
Finally, you can sprinkle it on your homemade breads to give them a pleasant scent
Add a spoonful of cumin powder to your salads, especially to season grated carrots or chickpea salads. Also try the mechouia salad, made from candied vegetables and quite spicy, or Moroccan-style carrots, cooked in rings and served cold and marinated in oil and cumin. Sprinkle some on your olives as well as a little parsley and a spoonful of oil to obtain "Moroccan-style" olives
It promotes digestion and calms digestive disorders. Prepare cumin water by boiling a spoonful of cumin with water and drink it like water.
To promote sleep, take a little cumin powder mixed in a little yogurt or compote before going to sleep.
For pregnant women, a little cumin in a yogurt for breakfast would reduce morning sickness.
