Ingredients: 1 cup peeled and chopped tomatoes, 1/4 cup cider vinegar, 1/4 cup olive oil, 1/4 cup honey, 1 tablespoon chopped Trinidad Scorpion pepper, 1 tablespoon chopped fresh ginger, 1/4 cup chopped fresh coriander, 2 teaspoons salt. Preparation: Place all ingredients in a blender and blend until smooth. Pour into a sterilized jar and refrigerate until cold. Use to season salads, hot dishes or sandwiches.

Trinidad Scorpion Pepper Salsa

Ingredients: 2 cups peeled and diced tomatoes, 1/2 cup chopped red bell pepper, 1/4 cup chopped onion, 1/4 cup chopped fresh cilantro, 1/4 cup cider vinegar, 2 teaspoons chopped Trinidad Scorpion pepper, 1 teaspoon salt, 1 teaspoon sugar. Preparation: Put all ingredients in a bowl and mix. Let stand for one hour before serving.
