What is cayenne pepper?

Cayenne pepper belongs to the Capsicum annuum family as well as the Capsicum frutescens family. It is recognizable by its bright red color and its elongated shape. It is an annual perennial plant that is cultivated for its fruits.

The cayenne pepper appreciates rich, humid, but well-drained soils. An exposure full sun will support the growth of the plant and the maturity of its fruits.

It is advised to plant Capsicum annuum in spring to avoid the last frosts. Ideally from March to June depending on the region.

Did you know? the cayenne pepper obtains a note of 6 on the scale of Scoville (30 000 units Scoville). This scale defines the degree of spiciness of spices by analyzing the capsaicin content

The harvest of the cayenne pepper

The harvest of the pepper is done about 5 months after planting. Generally, at the end of the summer. The plant has then reached its adult size, between 50 and 80 cm.

It is advisable to pick the peppers with gloves to avoid the risk of itching eyes caused by their pungent extracts. Cayenne pepper powder is made with dried peppers that are ground.

David Vanille's choice: I selected this cayenne pepper powder for its strong spiciness and its smoky aftertaste typical of hot peppers. Used sparingly, it will spice up your dishes to the delight of lovers of spicy cuisine.

The differences between paprika and chili pepper

Chilli pepper can be confused with paprika. It is true that paprika powder is made from dried paprika and chili pepper. However, it is the spiciness that makes them different. The paprika is very sweet and the chili pepper is hot.

The origins of cayenne pepper

The Cayenne pepper is originally from South America and takes its name from the city of Cayenne in Guyana. The first traces of this pepper go back several millennia. Some studies speak of - 9 000 BC, others of - 7 000 BC. Archaeologists have found it in ancient cave dwellings. Obviously, it was already used as a condiment.

Also called " The Devil's Chilli " because of its location on Devil's Island, later known as a Guyanese open-air prison, it was imported in the 15th century to Europe, during the colonization of South America by the Spaniards. The Spaniards and Portuguese used cayenne pepper to replace black pepper.

Did you know? cayenne pepperis also known as "Devil's Pepper".

Appetizer: Pancakes with spicy Guacamole

The dish: Spaghetti with spicy bolognese sauce

A traditional Italian recipe with the addition of cayenne pepper powder for extra bite. Chop an onion and sauté in oil. Add ground beef. Add salt and pepper. Once the meat is cooked, add crushed tomatoes, bay leaves, basil and paprika. Let simmer for 1 hour. Add your cayenne pepper 15 minutes before the end of cooking.

The dessert: Chocolate cayenne pepper cake

A dessert with character! Sprinkle a pinch of cayenne pepper in your cake batter. Place in the oven. You can sprinkle more sparingly once the cake has cooled.

How to store cayenne pepper?

Cayennepepper powder can be stored in a dry place and away from light. We advise you to use an airtight container. This will allow it to keep all its flavors and its spiciness

Bonus: You put too much cayenne pepper powder in your dish? Some ingredients can help soften its spiciness. This is particularly true of dairy products such as milk or yogurt, but also of coconut milk.

Piment pas aussi fort qu'un piment de Cayenne se doit d'être.

Comment from David Vanille the 22/08/2022
