You know white sugar, brown sugar, cane sugar, but do you know Muscovado sugar? If not, now is the time for me to introduce you to this top quality product. Muscovado sugar (or mascobado sugar) is a pure and complete cane sugar. It comes from Mauritius or the Philippines, I for my part chose a farm located in Mauritius that produces a very high quality sugar in the rules of art. If you feel you have eaten a similar sugar in Latin America, that is quite possible. However, it is called something else. Here you eat rapadura. In Colombia it is known as panela.
If Muscovado is a sugar, be prepared to taste a product that has nothing to do with what you know, especially if you eat white sugar. It just tastes like sugar, that's all. Muscovado sugar offers you a taste experience. This time, your sugar develops unique aromas between notes of caramel, liquorice and vanilla. Those who don't know its origin might simply think that this sugar has been transformed and flavoured, but you taste a totally natural product. Muscovado sugar is sugar in its simplest expression, but in its greatest gustatory complexity
But how do you get this Muscovado sugar? First of all, you need to harvesting sugar cane is the basis of this exceptional sugar. Then the juice is extracted from it, this juice is called " vesou ". It is filtered to remove impurities before being heated. This heating stage aims to remove all the liquid, it is the moment when this sugar will develop all its aromas. We then obtain a residue which is dried before being crushed. The Muscovado sugar is not refined, that's why it keeps its beautiful brown colour. Moreover, it is not separated from its molasses, which also influences its final colour, which is much darker than that of brown sugar, for example.
This brown sugar will naturally be used mainly for dessert. We can perfectly imagine a gingerbread with Muscovado sugar, a carrot cake or speculoos. However, if you like sweet and savoury flavours, you will love to use this ingredient in more unexpected recipes.
Here, you can make a recipe for crème brulée by adding mixed foie gras to your preparation composed of egg yolks, milk, cream and seasoning to your liking. When your preparation is ready, sprinkle it with Muscovado sugar and pass the torch.
Caramelized pork is an emblematic dish for lovers of sweet and sour. To make your caramel, you need water and Muscovado sugar. When your caramel is ready, add seasoned chicken stock (you can add soy sauce, ginger, etc. for Asian flavours). Place your pieces of pork in this sauce and cook for about 20 minutes (depending on the thickness of your pork).
Cookies are a simple Sunday recipe that allows you to enjoy sweet flavours without spending hours in the kitchen. Use your usual recipe and simply replace the white sugar or brown sugar with Muscovado sugar (be sure to reduce the sugar dose, as its sweetening power is greater). As Muscovado sugar is not separated from its molasses, it is rich in trace elements and vitamin B6. It also contains vitamins B3, B5 and B9. On the other hand, this sugar is not demineralizing, the risk of caries is less important than with a traditional sugar. It is good for your balanced diet. More powerful, Muscovado sugar is used in smaller quantities than white sugar, you can reduce your sugar use by about 30%.
Muscovado sugar is somewhat moist, so it is best to store it in a dry place in an airtight box. If, despite all your precautions, sugar crystals form, do not hesitate to blend them in a blender.
