  • What is star anise?

    Star anise (Illicium verum) is also known as star anise. It is the fruit of the star anise tree. This tree grows in the tropical and subtropical regions of Asia.

    Vietnam's star anise is the most famous.

    The badian tree is a tree with evergreen leaves that develops slightly greenish yellow flowers during its flowering. Its fruits (carpels) are distinguished by their shape similar to that of a star, hence the name: star anise.

    Star anise develops an intense fragrance. It is found in spice mixtures, including the famous "5 spices", infused in black tea and in many traditional Asian recipes such as Pho soup, the Vietnamese national dish or Bánh Gan, a Vietnamese coconut milk flan.

    The harvest of star anise (star anise)

    The star anise tree begins to bear fruit once it has reached maturity, i.e. 15 years after planting. Star anise is harvested twice a year in spring (March) and autumn (September and October)

    Star anise is grown by local farmers. It is cultivated green and continues to mature. It can be used whole or in powder form.

    Did you know that? It is customary in Lang Son province, in northeast Vietnam, to plant a badian tree when a child is born. 15 years later, the star anise collected will be used to finance the child's education.

Used in cooking, it brings an oriental flavour to your dishes. Star anise powder is appreciated in cooking for its ease of use and accurate dosage.

    The different varieties of aniseed

    There are several varieties of aniseed:

    • Green anise: its taste is less pronounced than star anise. It is used in the manufacture of anisette and some flavoured candies.
    • Star anise: its taste is pronounced. It is used in the composition of aniseed alcohols such as Pastis and Ouzo.
    • Vosges anise: also called Caraway or meadow cumin. Its seeds are used for its medicinal properties or as spices found in some cheeses, sauerkraut and also in harissa.
    • Hyssop anise: is used as an aromatic plant in North America and Asia.

    Differences between star anise and green anise

    Star anise has a more pronounced taste than green anise. Star anise comes from China, Vietnam or India, while green anise is native to the Mediterranean basin.


    The origins of star anise

    Anise is an aromatic plant whose first traces can be found in Greece and Ancient Rome in 1600 BC:

    1. Snacks: especially during gladiator fights, during which spectators enjoyed aniseed cookies in the stands of the arena.
    2. Spices: to flavour Cretan wine

    Marco Polo brought the star anise back to Europe in the 14th century. In the 16th century, anise was used to spice up jams.

    Anise nowadays

    Anise is used in many alcohol recipes such as Pastis or anisette. It is also found in the composition of some flu drugs.

    Other uses of star anise

    Anise has many medicinal properties. It is made into star anise essential oil, used for its digestive properties and its action on the respiratory tract. It is one of the most widely used plants in herbal medicine and traditional medicine.

    It has properties:

    • Anti-inflammatory
    • Analgesics
    • Antispasmodic drugs
    • Digestive

    Star anise is also used in some treatments for:

    • Relieve rheumatism
    • Treating gastrointestinal problems
    • Reduce flatulence

    How to use star anise in cooking?

    Traditionally, star anise is consumed whole, but star anise powder is now more commonly used. The star can be added to a simmering dish or integrated into a broth or soup. It is also used as an infusion or added in a black tea to bring its sweet and aniseed flavour

    Star anise powder, on the other hand, makes it possible to measure the seasoning precisely. It is used sparingly because its taste is intense.

    Our recipe ideas with star anise

    The unique taste of star anise is used in many sweet and savoury recipes. Vietnam's star anise is an exceptional variety from the mountainous regions of northeastern Vietnam. With its intense taste, it gives another dimension to your kitchen.

    The starter: Orange salad with star anise

    Anise blending perfectly with citrus fruits, I have chosen to offer you a simple and light oriental recipe. Detail the orange supremes or cut your oranges into thin slices with a sharp knife. Add a little honey and sprinkle with star anise. This side salad can be served at breakfast, lunch or dinner. It is delicious with roasted poultry.

    The dish: fennel pie

    For lunch, we offer you a quick and tasty recipe where star anise is served with fennel for our greatest pleasure. Use a puff pastry as a base. In a frying pan, sauté chopped onions and fennel. Add the Vietnamese star anise powder and wet with a glass of vegetable broth. Add a little pepper. Once the broth has been reduced, drain your vegetables and spread them on your dough. Bake. Excellent with a white wine!

    Dessert: Hot wine with spices

    A must-have winter drink that warms bodies and hearts in the cold season, mulled wine would not have this special taste without star anise. For a bottle of red wine, count 5 cl of juniper alcohol, a star anise star (or half a teaspoon of star anise powder), 2 cinnamon sticks, 3 cloves, nutmeg, ginger, 125g sugar and the zest of a quarter lemon and a quarter orange. Simmer for 15 to 20 minutes. Serve very hot!

    Tip: Don't you have a whole star anise? Half a spoonful of star anise powder will bring as much taste.

    How to store star anise (Badiane)?

    To preserve all the taste qualities of your powdered star anise, store it in an airtight container, preferably in a cool, dry place, away from light.

    Whole aniseed stars can be stored between 2 and 4 years depending on the conditions in which they are stored.

    Star anise seeds can be stored longer than star anise stars, always in a sealed jar and in a dry, dark atmosphere.
