Pyramid Thyme is an aromatic herb that has held a central place in the daily life of the Egyptians for thousands of years. This plant with its pleasant and recognizable scent is used every day for great celebrations and to flavour food.
Since Ancient Egypt, thyme has been able to resist changes in the environment and adapt to all types of climates, from major droughts to irrigation schemes. It has never lost its enchanting smell and taste. It is for these reasons that it is the Egyptian thyme that I have selected from among the hundreds of species listed.
David Vanille's choice: I chose Pyramid Thyme for its exceptional aroma. It is self-sufficient and that's why I offer it to you in the simplest way in the world! It can of course be used in the composition of aromatic plant mixtures, but used on its own, it is perfectly suited to both sweet and savoury cooking.
I could have chosen another variety of thyme, one of those that grows on the French Mediterranean coast. But during my trip to Egypt, I was charmed by its very special smell. It is therefore the thyme of the Pyramids that I propose to you.

The origin of thyme is rich in the history of the different peoples who use it. One of the tales from Greek mythology tells that thyme is said to have been born from the tears of the beautiful Helen of Troy. She would have cried so much because of the worry caused by the Trojan War that a shrub was eventually born and blossomed from her tears. This plant thus became a symbol of courage and divinity.
The Greeks burned thyme in front of temples, in public squares and at the gates of rich houses to protect them from bad luck.
The Egyptians used it to purify and eternalize the souls of their dead. An Egyptian legend says that the nurturing goddess Hesat created Pyramid thyme to offer this seasoning in abundance to the people of Egypt and the Pharaohs. It is believed to have aphrodisiac powers in the making of love filters..
The Romans used it during protection rites, in medicinal preparations and in cosmetics. They were the ones who made this plant travel all over Europe!
From the Middle Ages onwards, thyme was used in cooking to flavour the dishes of knights.

From the seasoning of a vinaigrette or a marinade, to the composition of a bouquet garni for your simmered dishes, through its raw use for all types of cooking, thyme from the Pyramids is a tasty ally for all your culinary creations.
Thyme is known for its ability to season many dishes. It is often used in the composition of seasonings for grilled meat or dishes in sauce. I have chosen to give you three original recipes in which to use Egyptian thyme.
Here is my basic recipe for making a salty cake for the aperitif. It's up to you to choose which ingredients you want to add according to your taste and that of your guests.
Savoury ingredients, about 200 g: dried tomatoes, olives, chicken, ham, chorizo, tuna, salmon... according to your wishes. Mix all the ingredients together, place in a cake tin and bake for 25 minutes at 180 - 200 degrees.
Thyme has immune system protective and antiseptic properties. In combination with other ingredients, thyme infusion is a drink that helps fight off colds for the whole family. In a saucepan of 500 to 600 ml of simmering water, make an infusion:
Whisk the sugar and egg yolk. Boil the milk and let the thyme and vanilla infuse. Allow to cool slightly before mixing with the eggs and sugar. Cook over low heat with the cornflour, stirring until the cream thickens. Pour into ramekins or verrines. Leave to cool and place in the fridge for at least 2 hours.
Thyme from Egypt can be stored for many months, preferably in a dark place. Keep it hermetically sealed in its bag, in an iron or earthen pot.
