  • What is my Scandinavian smoked Viking salt?

    Smoked Viking salt is a great alternative to traditional salt. It will give a particular taste to your hot or cold dishes. Scandinavians have been experts in smoking and salting fish and meat for decades. This precious know-how still surprises our gourmet taste buds today.

    Ingredients of Viking smoked salt

    It is often the simplest recipes that are most appreciated. I prepared the smoked Viking salt in the most sober way possible. It is composed of an aromatic salt that I have specially selected to make this mixture.

    The Nordic flavours in this salt come from the smoke aromas that I dose very precisely in order to bring this characteristic Nordic taste note. I have tested this recipe several times, with different measures to find the right balance that I am proposing to you today.

    The pleasure of taste also depends on the pleasure of the eyes. So, to recover the colour of the smoking technique of meat and fish, I use the natural caramel-based colouring agent E150a. A hint of this ingredient is sufficient to obtain the slight orange colouring of Nordic salt.

    The origins of salt in the Nordic countries

    We often hear about the Vikings as a tough and merciless warrior people. The legends about their past are certainly true: they were proud and organized fighters. But what interests me in their history are the less popular stories about their travels and the gastronomy of these northern tribes. Because if they are most often known for their brutality, they are less so for their conviviality around the table.

    The Vikings were experts in smoking and curing. When they did not immediately cook the fruits of hunting and fishing as stew or grilled, they prepared their food for long storage.

    The story of Lothar and Berghild

    Often, genius ideas come from a mistake. This is exactly the case for Viking smoked salt. The recipe for this Scandinavian salt comes from a carelessness. When returning from fishing with a Viking tribe, the practice was to cut up fish and cetaceans in order to store them in a salt cellar for better conservation. However, the salting room was already filled with all the meat from the breeding of pigs, goats and sheep.

    Lothar, at the age of 14, was entrusted with making the necessary space to put food in a safe place for the winter. The young man therefore moved the pieces of salted meat into the smoking room without worrying about the fact that they had already been salted...

    Then one day, when preparing a meal made from leg of lamb, Berghild, one of the women of the tribe, felt that the meat had an unusual smell. She still prepared the meat, with the worry of disappointing the members of her tribe. The questioning in the eyes of the people at the table gave way to the delight of their stomachs. Mixing the iodized taste of salt with the smoke flavours was an excellent idea! We can therefore thank Lothar for his clumsiness and Berghild for his risk-taking, to whom we owe the seasoning of our plates since Scandinavia in the 10th century.

    Benefits of salt

    The harmful effects of salt are regularly pointed out when it is consumed in excess. However, when used in dishes in moderation, it contributes to the mineral intake in the body through the presence of sodium and magnesium. Iodine also plays a role in the balance and proper functioning of the thyroid gland.

    How to use Viking smoked salt in cooking?

    On the nose and in the mouth, this combination of iodine flavours reminiscent of sea spray and a palette of smoke plunges you directly into the heart of the Scandinavian forests! Whether for daily meals or for more elaborate dishes, Scandinavian salt can be used in all sauces. Use it to salt directly on your plate or add it during the preparation of your dishes. Salt from the Nordic countries is perfectly suited to different foods and recipes:

    • Salted butter
    • Fish (especially excellent with grilled salmon)
    • Potatoes and potatoes
    • Winter vegetables
    • Eggs
    • Red and white meats
    • Marinades

    How to use it on these dishes? Sprinkle it directly on foods at the beginning of cooking to impregnate your preparations or make a marinade for your turkey skewers or pork chops before grilling them on the barbecue.     Used directly in soft-boiled eggs, the smell of smoke gives a fabulous taste to this seemingly very basic dish. Scandinavian salt will give an original touch and a special aroma to your eggs.

    The main course: ideal for meat and fish

    It is difficult to give you a single main course recipe with Viking smoked salt because it is a perfect seasoning for all your red and white meats, poultry and fish. It goes well with roast pork, leg of lamb or roast chicken with many flavours. In a traditional Scandinavian spirit, offer your guests a delicious Bakerens Lam (baker's lamb)!

    How to store smoked salt

    Viking smoked salt can simply be stored in a dry place, away from moisture, in a tin can or in a closed glass jar. Keep it close to your work plan for use in your everyday recipes!
