Traditionally, Colombo is a mixture of 4 spices: coriander, chilli, garlic and turmeric.
I have chosen to compose my blend using at least these 4 original spices, in order to give you an authentic recipe.
Like Massalé and Ras-el-hanout, the Colombo des Îles blend will have a different composition depending on the regions and local tastes.
Did you know that? Colombo des Îles is also called "Caribbean Curry". It occupies a predominant place in Creole kitchens.
The combination I propose to you is composed of 10 spices.
Some of these spices are roasted or roasted before being ground into powder, then the whole is skilfully dosed to offer you a pleasant blend on the nose and in the mouth.
The traditional Colombo of the Islands is a mixture of 4 spices: coriander, chilli, garlic and turmeric. But Colombo has many variations depending on the region or the people who make it up.
Current Colombo blends can contain up to 10 spices to obtain more subtle and flavorful spice blends. This is particularly the case of this Colombo of the islands.
Colombo takes its name from the capital of Sri Lanka, where it originated. During the migration of Eastern Indians (the coolies) to the West Indies in the 19th century, its composition changed, particularly because of the absence of certain spices on these islands. It will very quickly occupy a predominant place in Creole cuisine where each family will have its own recipe and even give its name to a dish that will become a must in the West Indies!
The spices in this blend all contain virtues that are specific to them or that they share. Among other things, we note:
Even if at first sight Colombo powder could be confused with curry, it is enough to smell this mixture of spices for Colombo des Îles in order to differentiate them. Indeed, the aromas of this blend will be much stronger on the nose than a simple basic curry. It will have an inimitable character when sprinkled in your dishes and recipes.
On the palate, you will find more developed flavours than those that characterize a Kerala Curry.
The notes that emerge will be slightly aniseed (thanks to fennel), garlic, spicy and woody (turmeric, cumin and dominant pepper). Then you will feel another more vegetal aromatic impulse, notably due to the presence of coriander and fenugreek.
The combination of these ten spices and herbs will succeed in transporting you to each of their countries of origin. The touch of salt amplifies my aromatic composition.
Good to know: This blend of Colombo spices from the Islands is ideal for long cooking. It therefore has its rightful place in stews.
If its name reminds us directly of this typical dish of Caribbean cuisine, you will discover that it is also possible to associate this Colombo des Îles with different meal times, and on very different dishes!
Prepare and enjoy wonderful pork, chicken and goat pigeon pigeons, having made sure to leave the meat to marinate all night before the meal in this mixture. You can try the Colombo de Porc Antillais, in the style of Alain Ducasse.
Colombo is also available with dishes from the sea, such as a Colombo of sea bream (mahi-mahi) or swordfish.

A simple and tasty starter that has the merit of being original and quick to prepare. Cut out peppers, tomatoes and an onion. Fry them in oil. Add a teaspoon of our spice mixture. Serve on a slice of toasted bread. Serve with a salad dressing.
A rice to accompany that seduces for its pronounced taste. Sauté sliced onions in oil. Add long rice and a teaspoon of Colombo des Îles, fry the rice before soaking with 0.5 liter of boiling water. Let it cook while stirring. Excellent with poultry or fish.
A dessert with exotic fruits that sublimates our Colombo des Îles. A simple and quick recipe to end the meal on a gourmet yet light note. Cut your mango into large cubes. Plant them on a skewer pick and grill them on the grill. Sprinkle with the spice mixture.
The Colombo des Îles spice blend is preserved like most of our spices and herbs: dry and protected from the light. We recommend that you use an airtight container to keep its flavours intact.
