What is my grill and marinade spice blend?

To obtain grills and marinades with flavours that reveal the taste of food, it is essential to season them in the right way. It is not always easy to find the right balance between the different spices to cook your meats and fish. With my special blend of barbecue spices, you have everything you need for successful grilling, brazing and marinades at your fingertips in one package!

Ingredients of the grill and marinade mix

In order to satisfy the taste buds and stomachs, it is important to measure the different flavours carefully to achieve a balanced taste. For this blend of spices for grilling and marinades, I experimented with different recipes in order to arrive at the preparation that I am proposing to you today. It is composed of :

  • Crushed chilli pepper
  • Fennel
  • Lemon powder
  • Parsley
  • Anet

David vanilla's opinion: To please all palates, there is no sensation of fire in the mouth. It comes to enhance the taste of food. Fennel and lemon bring freshness for the right balance between strong and fresh.

The origins of the grill and marinade spice blend

The word "barbecue" comes from the Arawak Indian term "barbacoa" which refers to the wooden rack used to roast or grill meat. When we talk about grilling, the main idea that comes to mind is the American know-how for barbecuing. In the United States, the barbecue is a real culinary habit that is part of everyday life.

In South America, the braséro technique is widely used to cook meats. Argentines in particular are very fond of this type of cooking.

Marinade is a food preparation process that is used in all parts of the world to give taste and tenderness to food before cooking.

Benefits of grilling and marinating spice blend

To make the mixture of grilled meat and marinades, I used condiments specifically selected for their taste. Spices are known for their health benefits, and this barbecue mix is made of :

  • Chilli and fennel that improve digestion
  • Lemon that supports the immune system's defences
  • Parsley which acts as a diuretic and facilitates waste disposal.

How to use the grill and marinade spice mix?

The marinade for meat

This ready-to-use mixture allows you to season and marinate all your grilled items. To add flavour to direct grilling, it is important to prepare the food ahead of time so that it will be impregnated with the flavours that will be revealed by the grill. The marinade step is very important for the success of your barbecue, grill, oven or pan cooking. In a marinade, simply mix the barbecue spices with either olive oil or lemon juice before placing your piece of meat in it. For an even more flavourful and fragrant cooking experience, marinate in the refrigerator for at least two hours.

Fish and shellfish

Feel like scenting seafood? On fish or shellfish, the barbecue mix is perfect! Prawns, salmon steaks, sardines and other fish skewers will be delicious with the mix of grill and marinade spices! In addition to grilling meals, you can use this mixture in tex-mex cooking, add a touch of tomato to the barbecue spices and give a taste of Central America to your minced meat!

For fresh flavors:

With a pinch, it's a real boost to your pasta or rice dishes that smell good in summer and sunshine! Sprinkle lightly on your salads and raw vegetables to bring a feeling of freshness and strength to your starters. During your aperitifs, you can also combine one or two spoons of this tasty mixture with fromage blanc to make a delicious dip in which to dip a few chips and vegetables.

Our recipe ideas with spices for grilling and marinades

The starter: The dip of cottage cheese for the aperitif

Accompanying your vegetables or appetizers for the aperitif, do not hesitate to prepare this recipe easily. Mix in a bowl :

  • 200 g curd cheese
  • 1 crushed clove of garlic
  • 1 teaspoon of mustard
  • 1 tablespoon vinegar
  • 1 or 2 teaspoons of David Vanilla Grill & Marinade Mix

The dish: Chicken David Vanilla style

Here's a recipe for a tender and crispy chicken for the grill or oven. Make a marinade with olive oil and a few teaspoons of David Vanilla Grill and Marinade Mix. Adjust the doses according to the amount of chicken you have. In a salad bowl, coat drumsticks and chicken thighs on all surfaces with marinade. Feel free to lift the skin a little to allow the marinade to penetrate.

Leave covered for at least two hours in the fridge, the ideal being to make this preparation the night before to let the aromas permeate the meat all night long. Simply place the chicken pieces in an ovenproof dish or grill them on the barbecue

The accompaniment: oven-roasted vegetables

To accompany your meats and fish, prepare oven-roasted vegetables. Finely chop peppers, carrots, onions, zucchini, squash... Place the vegetables on a sheet of baking paper in an ovenproof dish and brush with olive oil. Sprinkle with David Vanilla Grill and Marinade Mix. Bake at 180 degrees

How to store the grill and marinade spice blend

David Vanilla's blend of grilling and marinade spices can be stored in a cool, dry place, away from moisture. You can keep it in a glass jar or in its original hermetically sealed package.
