What could be more convivial than grilling our favourite dishes on the barbecue to bring together young and old around preparations as simple as they are tasty?
Did you know that this method of cooking comes from the Americas? It was Christopher Columbus who reported its existence in 1493 following his first expeditions to these lands. Etymologically, it comes from the term arawak barbacoa which refers to the wooden rack used to roast or grill meat.
When you hear the word "grilling", many possibilities come to mind naturally... From the piece of meat that you prepare in a pan to the famous barbecue on which you can grill any piece of meat, fish or shellfish in very different forms.
As for the word "marinade", it reminds us that there are an infinite number of recipes that allow us to give these grilled dishes their very special flavours.
It is in this versatile perspective that I have chosen to offer you a blend of spices that will allow you, whatever your desire of the moment, to sublimate all your grills and marinades, on any piece of meat or fish.
This is the "Grilled and Marinated Mix", a name with a broad spectrum for an equally diversified use.
This is a blend of only 5 ingredients, selected with the usual care of David Vanille, that will enchant and exalt the flavours of your grilled preparation in all circumstances. The sublime combination of chilli and lemon will bring you the sparkle you expect from a barbecue or brazier, while the herbaceous flavours of fennel, parsley and dill will bring a welcome breath of freshness to these summery meals.
This ready-to-use mixture will allow you to season and marinate all your grilling pieces in the simplest way possible.
And because this mixture has not finished surprising you with its multiplicity, it also allows you to use it in two forms.
As a marinade, simply mix one or two spoons of this "Grilled and Marinated" mixture with olive oil and/or lemon juice before placing your piece of meat or fish in it for a minimum of two hours.
Are you looking for the true feeling of each of the ingredients in this blend? Feel free to sprinkle it directly at the very end of the cooking process in order to feel this aromatic firework display that enhances your grilled pieces.
On the nose, the aniseed freshness typical of fennel will come first, followed closely by the herbaceous aspect of parsley and dill. Then will come the acidity of the lemon followed by the slight spiciness of the pepper.
When you have this mixture in your mouth, the aromatic unroll will be precisely the other way around. The attack will be frank, spicy and acidic to continue with this overall aniseed and green aromatic. All this on a base note of parsley.
