It is a blend of spices, quite spicy, which comes straight from Louisiana.
Imagine yourself for a moment in the middle of the 18th century. At that time, French people had elected Nova Scotia (Acadia - Northern Canada) as their host country. But it was not counting on the British government to drive them out of this region, on the pretext that they were Catholics, French-speaking and opposed to the idea of swearing allegiance to the English crown. Here are our French settlers deported to very humid, even marshy lands, especially in the bayous, where the taste references will be totally disrupted.
