Many fish can be cooked perfectly in a court-bouillon, let's take a salmon steak today. Put water in your pan, enough to cover the fish, add salt and special fish and shellfish mix to obtain a very fragrant and aromatic court-bouillon. Take your fish out and drain it well. Serve it with a sauce (beurre blanc, beurre citron, etc.) as well as rice and small vegetables.
